What's for Dinner ... Tuesday?

The sun has been shining brightly, and the temps are in mid 80's. The humidity is very high. Too muggy for my taste.

I was busy a lot earlier so for my meal tonight, I took out some spaghetti sauce from the freezer. Another time I'd cooked too many whole wheat noodles for the recipe I was making so I'd frozen the rest. Tasted pretty good to me.

So what is your main meal for today?

26th Anniversary today. Going to our favorite Mexican place for dinner.

We are having salmon, mashed potatoes, and fresh green beans. I think I am going to try something new, instead of corn meal in the patties, I am going to try panko bread crumbs.

Grilled some salmon on a cedar plank, always so good. Made a salad with greens and marinated veggies from the garden, a little rice pilaf. Awfully hot here today, even though the patio and back porch are shaded after about ten, you could feel the heat radiating from the concrete. Glad that the salmon didn't take very long!

It's all about stuff from the garden these days. I've fixed a marinated salad of zucchini ribbons, rat tail radish, grape tomatoes, cukes, chard, quinoa, and goat cheese. (I don't have a goat in my garden and don't raise quinoa, lol.) Robert is getting ready to grill some sliced pork tenderloin, also marinated, to add to the meal. We had another big storm this afternoon, which cooled things off a lot even though it's steamy. If I wore glasses anymore, they would fog up when I go outside. It is "the air that you wear", that's for sure.

Leftovers here, too. I'm going to make chicken fajitas with the chicken from last night, plus grilled green, yellow sweet peppers, and onions, avocado, chopped lettuce and tomatoes and sour cream, all on a flour tortilla. I'll mix up a little fresh salsa, too, I guess. Raven, I hope that your power comes back on SOON!

Hi Shirley,
It's downright hot and humid today, yuck.

We just cleaned some leftovers out of the frig, snacked basically. Jambalaya and pasta, and some jello.

Hubby kept telling me how much he dislikes Jello. Well, when we were both drinking liquids prior to his surgery , I made some jello, so we could chew on something. He loved it. LOL. So now I make strawberry or lime jello.

Happy Anniversary, Angelaid. Hope you enjoy your dinner. Hot, hot, hot here today. probably too much too soon but I'm not complaining. Got a lot of roll out there today on the golf course. I stayed for lunch after golf and had a Cobb salad. It was very big and I brought most of it home. There was very little dressing on it so it held up well. That's what was for dinner tonight.

Angelaid: Congratulations!! I hope you enjoy your night out.

Orchid: I envy you your fresh green beans, a favorite of mine. Let us know how your experiment goes. My family always has used cracker crumbs.

Pam: Any leftovers? I'll gladly take them off your hands. (I miss Patti too).

Jasdip: Sometimes these guys just don't know what they do actually like/dislike. Now that you have the refrigerator cleaned out, you can cook again.

Georgysmom: I like getting a meal that feeds you twice. Smart buying.

Phyllis: I wish I could have had a big, thick slice of your bread to go with my pasta/sauce like you did.

Congratulations to you and your husband, Angelaid.

Robert is outside shucking corn right now. The water is already boiling. The chicken is about ready to be taken off. I used a BBQ sauce/apricot jam/ concoction on the chicken. Sauteeing some fresh picked sugar snaps with a small shallot.

I could just eat nothing but the corn and sugar peas and be very happy.

Rhizo: When I was young, I made meals of corn on the cob and sliced tomatoes. Today I'd have to have the chicken with it for protein.

Yesterday was pretty nice with a nice breeze but by late afternoon some rain came in. I just had a ham sandwich with lettuce and Miracle Whip on it. I don't like eating much in the evening and I eat early.
