What's For Dinner Tonight?

I tried 2 new recipes today.

One a chicken stir-fry recipe and the other a bread recipe using a hot cereal that is only found in Canada, called Red River. Red River cereal is 100% goodness......cracked wheat, cracked rye and whole and cracked flax seed. It's so good!

Sunny Hoisin Chicken

4 boneless chicken breasts, cut into 1" pieces (I didn't use 4, if you do you'd have to double the sauce)

salt and pepper

1 tbsp vegetable oil

1 clove garlic, minced

1 tsp orange zest

1/2 cup orange juice

1/4 cup hoisin sauce

hot pepper flakes---I used Sriracha hot sauce

Heat oil over medium-high heat. Sprinkle chicken with salt and pepper and brown in skillet. Transfer to a bowl and keep warm.

Add garlic to skillet, cook 1 minute. Combine orange juice, zest, hoisin sauce and sriracha sauce. Add to skillet and bring to a boil; cook 3 minutes until slightly thickened.

Add chicken and cook until heated through and coated with the sauce. (This recipe went into my Keep binder.)

The bread is really good. I can't wait to try it toasted.

Red River Cereal Bread

1 1/3 cups water

2 tbsp oil

1 1/2 cups flour

1 1/3 cups whole wheat flour

1/2 cup Red River cereal

1 1/2 tsp salt

1 1/2 tsp yeast

Combine ingredients in a bread machine on the dough setting. Form and let rise in a loaf pan and bake at 375 for 35-40 minutes.
