What's for dinner tonight?

We finally got some much needed rain yesterday and this morning. Now I need to get out there and weed. I made a curried chicken salad for dinner with hard rolls. I also made a lemon bundt cake this morning. So Harry will even have dessert :-)

Met DS for lunch at Cajun Steamer. Never been there, but son loves their food.

Packed!

He and I had each a bowl of gumbo ya ya! Excellent! Rice served in a separate bowl if you want to add it to the gumbo. I didn't, son did.

Cooking BBQ Ribs in the crockpot and Scalloped Potatos in the oven. Will be eating in 20 minutes and we are starving.

I am 1/4 Irish. For dinner tonight I made boiled dinner made with beef roast, potatoes, onions, celery, carrots, beets, rutabegas, and cabbage. It was delicious! We topped that off with Blarney Stones for desert. When I make things like this, I always over estimate the amount of EVERY veggie. We have enough left over for a re-heat meal and then a soup to follow that. I'm so glad DH enjoys this kind of meal, because it is what I grew up on. I didn't cook the dinner I was going to, but we had ham, baked sweet potatoes, green beans and pineapple casserole. Harry had bought an 11 pound ham just before the kids came (sometimes I wonder where that boy's mind is) and there was tons of it leftover, even after a meal and sandwiches a few times for lunch. Talk about growing, I swear that ham is magic! It's a spiral cut, so I cut most of the meat off the bone and sealed the bone for soup. Then I sealed a nice piece for ham and scalloped potatoes. Had some pieces left that will be good in an omelet or quiche. Plus lots left over from dinner. We have to start eating our frozen leftovers. There are more of those in the freezer than food to cook.

Tamale pie sounds good, Patti. Easy, too. Harry would like it, for sure. I'd love to have some of your turnips and greens, Ruthie. My mother used to cook the roots and throw the green tops away. LOL! Love greens. Your dinner sounds so good, Staci. Do you have a quesadilla maker? Harry loves them, but I have a problem turning them over (and keeping the insides inside). Have you ever posted the cream puff dessert? Sounds decadent, so please share! We are finally getting good tomatoes here, but not in the supermarket, Azzalea. Yesterday we stopped at a farmer's stand and I got 2 big red tomatoes, 3 ears of corn, 1 red pepper and 2 cucumbers for $4.89. Bengardening, those pinwheels must've been a lot of work to make by hand. It reminded me of churros but it was large and coiled around and around. A little taste of heaven, believe me!

Nuked two hot dogs in the microwave and used slices of wheat bread for buns. Just didn't do it for me, they weren't very tasty at all. And as far as whole wheat breads, I like them; but a good ole' white bread hot dog bun would have made them taste a little better. My stomach is protesting already.

It's rainy and cold and ugly today, so I've got scalloped potatoes and chicken breasts coated with my homemade shake and bake mix in the oven. Can't wait to dive in, I'm hungry!

I planned on fried catfish, a baked potato and a vegetable; but ended up thawing some frozen chicken noodle soup. It wasn't enough, so I'll have to make a sandwich of some kind. Wanna bet I'll be snacking up until bed time?

I made sloppy joes, baby peas and french fries for the kids. I ate a sloppy joe and a few peas and fries. Now I'm sipping coffee with a little Believe protein cappacino drink mixed in. It's less horrible that way.
