Wild rice casserole recipe

I have to make a wild rice casserole for a church dinner. Anybody have a good recipe to share?

I don't know if this is what you're looking for but I've made Paula Deen's recipe for a Sausage-Rice Casserole and I thought it was very good.

I can't find my written recipe..but this is how I make mine....

Wild Rice Caserole

Two boxes of Uncle Ben's wild and long grain rice
(discard the flavoring packet.)

One can cream of mushroom soup
One can cream of chicken soup

One cup chopped celery

One jar of chopped pimentos

One onion chopped

One green pepper chopped

One pound ground beef

Brown ground beef

Put in 9 x 13 baking pan (or cake pan)

Mix in all the rest of the ingredients

Pour water over until it covers over the top.

Bake at 350 degrees until brown on top.
And water is soaked up into rice.
I always take a little taste to make sure rice is tender.

The amounts of the peppers,celery and onion can be changed to suit your taste.

Takes awhile...about 50 mins

It has always been a hit wherever I have taken it.

As we all know, Taste is subjective. What is wonderful to you, May be dog food to me. And visa versa. That being said, I will say that there are a LOT of versions Of the King Ranch Casserole, aka King Ranch Chicken. Most I don't particulary care for, (I do not like corn tortillas in any way, shape or form) But some are really good. And while it is true that it is served In many so-called "Tea Rooms", Ranchers seldom order it. (Not many true ranchers eat in Tea Rooms) Where it got its name has always been a mystery to me. I live within walking distance of the main gate for the King Ranch. I've taken many visitors on the tour. And to my knowledge, Chickens are not something that's ever been raised there. Perhaps one of their chefs got tired of the ubiquitous beef? Anyhow, here is a casserole recipe we like, Usually a side dish, But could be an entree, I suppose. Squash Casserole (from an early 1980's Southern Living) Ingredients: 4 slices bacon 4 large yellow squash, sliced* 2 green onions, chopped 1 egg, beaten 1/2 C sour cream 1/2 C Swiss cheese, shredded 3/4 C Cheddar cheese, shredded Method: Fry bacon in a large skillet until crisp, Drain on papre towels. Crumble and set aside. Reserve drippings. Saute squash & onions in drippings 8 to 10 minutes. Combine egg & sour cream, Add to squash mixture. Stir in half the bacon. Spoon half the squash mixture into a greased 2 qt casserole. Sprinkle swiss cheese over top. Spoon remaining squash mixture over cheese. Sprinkle cheddar cheese over top, Top with remaining bacon. Bake at 350 degrees about 20 minutes (until bubbly) Yield: 6 servings * Can use zucchini, patty pan, or a mixture of summer squashes. It's all good. Rusty

Chicken Alfredo and Rice Casserole Ingredients Â 1 10-oz. container refrigerated light Alfredo pasta sauce Â 1/2 cup milk Â 2-1/2 cups cooked white rice or wild rice Â 2 cups cubed cooked chicken Â 1 cup frozen peas Â 1/3 cup chopped bottled roasted red sweet peppers Â 1/4 cup slivered almonds, toasted (optional) Â 1 Tbsp. snipped fresh basil or 1/2 tsp. dried basil, crushed Â 1 cup soft bread crumbs Â 1 Tbsp. butter, melted Directions 1. Preheat oven to 350 degrees F. In large bowl combine pasta sauce and milk. Stir in rice, chicken, peas, sweet peppers, nuts, and basil. Transfer to 1-1/2-quart baking dish. 2. Bake, covered, 30 minutes. Uncover and stir. Combine bread crumbs and melted butter; sprinkle atop. Bake, uncovered, 20 to 25 minutes more or until heated through and crumbs are golden brown. Let stand 5 minutes before serving. Serves 4.

Veal Chops with Southern Cheese Grits: Ã¢ÂÂ¢4 shoulder veal chops (about 3 pounds) Ã¢ÂÂ¢Salt and freshly ground black pepper Ã¢ÂÂ¢Flour, for dredging Ã¢ÂÂ¢Oil, for pan Ã¢ÂÂ¢1 large sweet onion, 1/2 diced and 1/2 chopped Ã¢ÂÂ¢2 carrots, diced Ã¢ÂÂ¢3 celery stalks, diced Ã¢ÂÂ¢1 small bay leaf Ã¢ÂÂ¢1/2 cup red wine Ã¢ÂÂ¢1 1/2 cups beef broth Ã¢ÂÂ¢2 tablespoons butter Ã¢ÂÂ¢10 ounces fresh mushrooms, sliced Ã¢ÂÂ¢Southern Cheese Grits, recipe follows Directions Season the veal chops with salt and pepper then dredge in flour, patting off excess flour. In a large saute pan over medium-high heat, add enough oil to coat bottom of the pan. Sear chops until golden brown, about 5 to 6 minutes per side. Remove from pan and set aside. In same pan, add more oil to coat bottom of pan and saute the diced onions, carrots, celery, and bay leaf until tender, about 10 minutes. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. When the wine has almost evaporated, add the broth, bring to a simmer and reduce sauce by half, about 10 minutes. Strain sauce through a fine mesh sieve into a bowl. Wipe the pan clean with a paper towel. Over medium heat, add the butter then chopped onion and mushrooms, and cook until tender, about 5 minutes. Season with salt and pepper, to taste. Add the veal and sauce back to the pan and bring to a simmer. Cook uncovered another 10 minutes, flipping the veal halfway through, until sauce thickens slightly. Serve over Southern Cheese Grits. I love wild rice! If there's any leftover, I eat it cold :o)

Never had it as a casserole.

I'm hungry, so been searching recipes.
This one sounds like one my son and family would enjoy!

Shrimp and Wild Rice Casserole
2 boxes Uncle BenÂs Original Long Grain and Wild Rice, cooked according to package directions
1 1/2 pounds small or medium shrimp - you can use fresh (peeled, deveined) or frozen (thawed) Bet you could substitute hmbrg or sausage for the shrimp.
2 cups sharp cheddar cheese grated, pre-shredded will work fine
2 cans cream of mushroom soup
2 tablespoons Worcestershire
dash of hot sauce

Mix it all together - put it in a greased 9 x 13 casserole dish - and bake at 350 for 30 minutes.

CHICKEN AND WILD RICE CASSEROLE

6-8 chicken breasts, cooked and cubed
chicken stock
butter
3-4 stalks celery, chopped
1 onion, chopped
2 boxes wild rice
2 cans cream of chicken soup
8 oz. sour cream
crushed potato chips, optional

Boil chicken in dutch oven until done and then cut into cubes. Saute celery and onion in a little butter until translucent. Cook wild rice according to package directions using stock from cooked chicken instead of water. Mix chicken, celery and onion, rice, soup and sour cream together and pour into a greased 9X13" dish. You can top casserole with crushed potato chips, if desired.
Bake at 350Â°F for 30 minutes.

This casserole can also be assembled the night before and then baked the next day, but bake an additional 15 minutes or until casserole is hot throughout.

Serves: 12-15.

*Recipe can easily be cut in half and baked in a 9X9" dish for fewer servings. This is by far the best chicken and rice casserole you will ever eat.
