Need a good 'hot dish' (casserole) recipe
Comments (17)here are a few I have made for years that always disappear quickly. Cheeseburger Pie 1lb. ground beef 1cup chopped onion 2cups chopped fresh mushrooms(optional) 1sm can sliced black olives drained(optional) 1/2tsp salt 1/2tsp pepper 1tsp.cajun seasoning 1cup shredded Cheddar cheese(or cheddar jack) 1cup milk 1/2cup Bisquick baking mix 2 eggs Preheat oven to 400 cook ground beef and onion and mushrooms in a skillet, drain. stir in seasonings. Spread meat mixture in large 9inch greased(pam)pie plate, sprinkle cheese on top. Stir together the milk, eggs , and bisquick in a bowl, whisking till well blended. Pour evenly over the pie. Bake 25 min or until knife inserted in center comes out clean, and pie is golden brown. this is great served with fresh tomato slices on top, and sour cream. the meat can be changed to cooked chicken pieces or ham. Chicken Enchilada Casserole 3 T. vegetable oil 1 medium onion, chopped 1 green bell pepper, chopped (or use small can of green chilis) 1 lb. chicken breast meat, cut into bite-size pieces 1 clove garlic, minced 1 pkg. taco seasoning mix 10 corn tortillas, torn into fourths 2 c. shredded Cheddar cheese or Mexican cheeses divided Enchilada Sauce (1 can ) Preheat oven to 350� F. Heat oil in large skillet. Cook onion, bell pepper, chicken and garlic, stirring occasionally, until tender. Remove from heat. Stir in taco seasoning mix and mix until chicken pieces are well coated. Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking pan. Layer half of tortillas, chicken mixture, enchilada sauce, and cheese. Repeat another layer, ending with cheese. Bake, uncovered, for 20 minutes or until heated through and cheese is melted. Serves: 6 One of our all time faves MEXICAN CASSEROLE 2 lbs. ground round 1 small onion, chopped 1 bell pepper, chopped OR use 1 small can chopped green chilis if you wish 1 can stewed tomatoes 1 can cream of mushroom soup 1 envelope Taco seasoning OR use mexican seasonings such as cumin, red pepper, chili powder to make your own mexican seasoning 1 clove garlic, minced 6-8 corn tortillas(I used more like 10 or 11 white corn tortillas) 1 lb. cheddar cheese, grated *I added sliced black olives on the top layer In a large skillet, brown ground meat with onions, peppers and garlic; drain. If using chopped green chilis, don't add them while browning meat. Add cream of mushroom soup, green chilis(if using them), stewed tomatoes and taco seasoning to meat and mix well; heat just to get mixture hot. In an oblong baking pan,(8x11.5 2qt) tear up enough tortillas to cover bottom of pan. Top with a layer of the meat mixture, a layer of cheese, and repeat to layer again. Comments (6)CHICKEN AND WILD RICE CASSEROLE 6-8 chicken breasts, cooked and cubed chicken stock butter 3-4 stalks celery, chopped 1 onion, chopped 2 boxes wild rice 2 cans cream of chicken soup 8 oz. sour cream crushed potato chips, optional Boil chicken in dutch oven until done and then cut into cubes. Saute celery and onion in a little butter until translucent. Cook wild rice according to package directions using stock from cooked chicken instead of water. Mix chicken, celery and onion, rice, soup and sour cream together and pour into a greased 9X13" dish. You can top casserole with crushed potato chips, if desired. Bake at 350°F for 30 minutes. This casserole can also be assembled the night before and then baked the next day, but bake an additional 15 minutes or until casserole is hot throughout. Serves: 12-15. *Recipe can easily be cut in half and baked in a 9X9" dish for fewer servings. Macaroni and Cheese with Broccoli This macaroni and cheese is enhanced, both nutritionally and flavor-wise, with fresh or frozen broccoli. The Gruyere cheese is great, but eel free to replace it with Swiss cheese or use more Cheddar cheese. Prep Time: 20 minutes Cook Time: 30 minutes Total Time: 50 minutes Ingredients: 8 ounces elbow macaroni 1 cup broccoli florets fresh or frozen 4 tablespoons butter 2 tablespoons flour 2 cups milk, low fat is fine 1 cup shredded sharp Cheddar cheese, divided 1/2 cup shredded Gruyere cheese 1/4 cup grated Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1/4 cup whole-wheat bread crumbs Instructions: In a medium saucepan, cook macaroni according to package directions, until slightly firm. Drain well. Cook the broccoli following package directions, on the stovetop or in the microwave. Preheat oven to 375 F. Grease a 2-quart baking dish. In a medium saucepan, melt butter. Add flour, stirring for about 1 minute, until smooth and bubbly. Gradually whisk in milk, stirring constantly until thickened, about 3 minutes, remove from heat. Reserve 1/2 cup cheddar cheese and stir remaining cheddar, Gruyere, Parmesan, salt, and cayenne into sauce until cheeses melt. Add macaroni and broccoli to sauce. Pour into prepared baking dish. Lady Byrd Johnson's fresh spinach casserole 3 lbs fresh spinach (I use the frozen) or 2 (10 ounce) boxes frozen chopped spinach (I use the frozen) 6 tablespoons parmesan cheese 6 tablespoons minced onions (heaping) 6 tablespoons light cream or 6 tablespoons half-and-half 6 tablespoons butter, melted, divided (can use low fat or fat free substitute) salt & fresh ground pepper 1/2 cup cracker crumb Directions: 1Preheat oven to 375�F. 2If using fresh spinach, wash spinach and drain. Cook damp spinach in a hot skillet until wilted; chop coarsely. 3Combine spinach with cheese, onion, cream and 4 tablespoons of the butter.
