I made these the other day and they are quite nice.

Lemony Roasted Potatoes

4 Yukon Gold or other large potatoes

3 tbsp lemon juice

3 tbsp olive oil

2 cloves garlic, minced

salt, pepper and dried oregano

Cook potatoes 15 minutes until slightly tender. Drain and cool.

Peel and cut into wedges.

Mix lemon juice, olive oil, garlic, salt and pepper and oregano.

Add potatoes and toss gently to coat.

Bake at 400 until crisp-tender and any liquid is evaporated; 30-40 minutes, turning occasionally.
