Chickpea Tabbouleh Salad (Canadian Living Cookbook)

Warm pita bread is a natural to serve with this vegetarian main course salad.

1 cup medium or coarse bulgur

1 can (19-oz) chickpeas, drained and rinsed

2 tomatoes, seeded and chopped

1 cup diced English cucumber

1 cup minced fresh parsley

1/2 cup chopped green onions

1/4 cup chopped fresh mint

Dressing

1/4 cup lemon juice

2 tbsp extra-virgin olive oil

2 cloves garlic, minced

salt and pepper

In saucepan, bring 1 3/4 cups water to boil; stir in bulgur. Reduce heat to low; cover and cook until liquid is evaporated, about 10 minutes. Transfer to a large bowl, fluff with fork. Let cool to room temperature.

Add chickpeas, tomatoes, cucumber, parsley, onions and mint.

In small bowl, whisk together lemon juice, oil, garlic, salt and pepper; pour over bulgur mixture and toss to combine.
