This was in our local paper and it looks good to me.

Tuna Pasta Nicoise (The Record)

When you make this be sure to add the tuna gently right at the end so that it doesn't cook, but is just warmed through by the other ingredients.

Firm pasta like penne, ziti, or the tubular kind

2-3 tbsp olive oil

1/2 medium onion, coarsely chopped

2 cloves garlic, sliced

2 tsp anchovy paste

28-oz can tomatoes

20 black olives

5-oz can solid tuna

large handful of chopped fresh parsley

Heat the oil over medium-high in a large skillet. Saute the onion, covered, for 10 minutes or until it becomes soft and sweet.

Uncover the pan, add the garlic and cook until it is pale gold.Stir in the anchovy paste, and add the tomatoes, breaking up with a spoon as it cooks.

Meanwhile cook the pasta and add to the sauce.

Turn off the heat. Add the olives and toss the pasta with the sauce until it's thoroughly coated. Gently fold in the tuna, leaving it in chunks. Season to taste with salt and pepper and sprinkle with parsley.
