No Fry Potato Doughnuts for Bread Machine * 30 Servings * Prep: 50 min. + rising Bake: 15 min. Ingredients * 3 medium potatoes, peeled and quartered * 1 cup warm 2% milk (110° to 115°) * 2 eggs, well beaten * 3/4 cup shortening * 1/2 cup sugar * 1 teaspoon salt * 4-1/2 cups bread flour * 2-1/4 teaspoons active dry yeast * TOPPING: * 3/4 cup sugar * 1-1/4 teaspoons ground cinnamon * 1/4 cup butter, melted Directions * Place potatoes in a saucepan and cover with water. Bring to a boil; cook until tender. Drain, reserving 1/4 cup cooking liquid; set liquid aside to cool to 70°-80°. Mash potatoes; set aside 1 cup to cool to room temperature. (Refrigerate any remaining mashed potatoes for another use.) * In bread machine pan, place the milk, eggs, shortening, sugar, salt, bread flour and yeast in order suggested by manufacturer, adding reserved cooking liquid and potatoes. Select dough setting (check dough after 5 minutes of mixing; some flour may remaining on top; add 1 to 2 tablespoons water or flour if needed). * When cycle is completed, turn dough onto a lightly floured surface. Knead in an addition 1/4 to 1/2 cup flour if necessary. Roll out to 1/2-in. thickness. Cut with a 2-1/2-in. doughnut cutter. Place on greased baking sheets; cover and let rise until almost doubled, about 25 minutes. * Bake at 350° for 15-20 minutes or until lightly browned. Combine sugar and cinnamon. Brush warm doughnuts with butter; dip in cinnamon-sugar. Yield: about 2-1/2 dozen. Sue

Tomato Dumplings 1 quart stewed tomatoes 2 T butter sugar to taste Two potatoes peeled and chopped or sliced Cook until potatoes are tender. 1 Make a batch of dumplings...these can be made from a simple bread type dough of flour, water and shortening. Roll out the dough and cut into wide strips. 2 Heat the tomatoes, butter and sugar together in a saucepan large enough to drop the dumplings on top. Cover. 3 Once the tomato mixture is hot, add the dumplings and then cook on your stove until the dumplings are done. Salt and pepper to taste. Sue

Tropical Sweet Bread for Bread Machine Ingredients * 1/4 cup warm buttermilk (70° to 80°) * 1/4 cup pineapple juice * 3 tablespoons butter, softened * 1 egg * 1/2 cup pineapple tidbits * 1/2 cup sliced ripe banana * 3 cups bread flour * 1/4 cup whole wheat flour * 1/2 cup flaked coconut * 4-1/2 teaspoons sugar * 1 teaspoon salt * 1/4 teaspoon baking soda * 1-1/2 teaspoons active dry yeast * 1/3 cup chopped macadamia nuts Directions * In bread machine pan, place the first 13 ingredients in order * suggested by manufacturer. Select basic bread setting. Choose crust * color and loaf size if available. Bake according to bread machine * directions (check dough after 5 minutes of mixing; add 1 to 2 * tablespoons water or flour if needed). * * Just before the final kneading (your machine may audibly signal * this), add the macadamia nuts. Whirligig Cookies Preheat oven to 375 degrees Baking time 10 to 12 minutes. 1/2 cup shortening 1/2 cup brown sugar 1/2 cup granulated sugar 1/2 cup peanut butter, creamy 1 egg, unbeaten 1 1/2 cups all purpose flour, sifted before measuring 1/2 teaspoon soda 1/2 teaspoon salt 1 package (6 ounces) chocolate chips Cream the brown sugar, white sugar and shortening and peanut butter thoroughly. Add the egg, beat until light and fluffy. Sift flour with soda and salt. Add to egg mixture and blend well. Roll dough into an oblong shape 1/4 inch thick. Melt chocolate chips over boiling water. Cool slightly. Spread on rolled dough with spatula. Roll up like a jelly roll and chill. Slice 1/4 inch. Place on ungreased cookie sheet. Bake. Remove from pans to racks to cool.
