This is from my Canadian Living Slow Cooker cookbook.

I made it last night. Don't wait for the rice to thicken before turning it off; it thickens up a *lot* when cool.

Velvety Rice Pudding.

5 cups homo milk

1 cup arborio rice

1/3 cup sugar

2 tsp grated lemon rind

1 tsp vanilla

pinch each cinnamon and salt

In slow cooker, combine all the ingredients. Cover and cook on low, stirring several times until rice is tender and pudding is creamy, about 4 to 4 1/2 hours.

Remove insert from slow coooker, let cool, stirring often, for 20 minutes.
