We had a casserole with noodles, peas and ham with a white sauce with cheese in, plus leftover cherry pie. This is Glenda's pineapple casserole recipe: GlendaÂs Pineapple casserole 1 cup sugar 6 tablespoons all-purpose flour 2 cups grated sharp cheddar **grate your own 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved 1 cup cracker crumbs --I use saltine, but ritz works too 1/2 cup melted butter Preheat the oven to 350 degrees F. Grease a medium-size casserole dish. In a large bowl, stir together the sugar and flour and pineapple juice. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. In another medium bowl, combine the cracker crumbs, melted butter, Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

I have a little left-over ham, so we're having a mac and cheese dish with ham, a salad, and some sort of veggie. Last night was pork with gravy, mashed potatoes, broccoli, and carrots. Night before was home made split pea soup and cornbread. That's as far back as I can remember :-)

We had turkey too ;0) But very simple. I tossed a turkey breast into the oven earlier, added a couple of potatoes to bake alongside, steamed some frozen corn. Busy day, and tomorrow and Sunday are busy too...I thought it would be nice to have something for sandwiches (leftover turkey) on hand.

Jasdip, I know!!!!! It's crazy how fast time goes by. The older one, the chef, is in a growth spurt and it brings back such memories of my own girlhood. She has a strongly confident personality and won't be led astray by bossy friends. She and her little sister argue like crazy, but she is her protector and champion. The love between the two is a force to be reckoned with, based on an early childhood of shared trauma and rescue. Amylou, the oldest sprite expressed an interest in cooking when she was very little. My husband made a step stool for her so that she could watch and participate. She began watching the Food network shows and then discovered the vast variety of YouTube cooking programs. She rang the doorbell one day two or more years ago and asked, when I opened the door, "Do you have a tart pan?" I didn't then, but do now. I love, love sharing my kitchen with her and she has been a very good student.
