Recently DD told hubby that I make the best egg rolls. They've been married over 20 years and she said he's never had my egg rolls and would I please make them some day. Today was the day. I'm tired having just finished up a little bit ago so our dinner tonight was egg rolls. :-))) Made a double batch to freeze and have them over some night for a Chinese dinner.

Oh Glenda I would like to visit that place! Sounds good.

We're getting ready to stop in at some friends' home for a cocktail and the sushi rolls I made for an appetizer.

We're planning on eating at one of the local Vietnamese restaurants in our city. I've been hungry for Pho.

Homemade pizza--my recipe makes six thick-crust pizzas when I use my large iron skillets. Two pepperoni and mushroom, two cheese, onion, and ripe olive, and two broccoli, ham, onion, mushroom, and ripe olive/no tomato sauce. We'll have enough left over for everyone's lunch tomorrow.

There was a recipe for vegetarian Paella (I know - a bit of an oxymoron and probably somewhat blasphemous) in our paper this week so I'm going to try it tonight.

I made pork tenderloin sandwiches and oven fries for hubby. I only make them about once a year. Between bitefuls, he kept telling me "good dinner", and wobbled out of here like a "Weeble". (Weebles waddle, but they don't fall down!)

Cracked me up. He's doing dishes now, but will probably have some peach pie and vanilla ice cream and fall asleep in his recliner, in a food coma. LOL

Big salad with fake crab, and a large glass of chocolate milk.

I fixed a brisket yesterday, so had some left over sliced brisket and some fruit salad.

We are in Nashville tonight. Finally got the call that DH is to report to the hospital at 5:30 in the am for surgery. There is a Cheesecake Factory around the corner, so we walked and had an early dinner. I had Tuscan chicken, which is grilled chicken with tomatoes, artichokes, asparagus on farro. Yummy! DH had mini burgers. We actually ate very light which was fine with me.

I will barely have time to grab a cup of hotel coffee in the morning to get me going. Ugh! I have an apple with me though in case it’s a while before I can grab some eggs and real coffee later.

Salmon burgers. Keeping it simple tonight as we are also prepping to make tamales tomorrow. Pork roast has been simmered in broth until tender and I just finished shredding it with two forks. The broth will be used as part of the sauce that the meat will go into later.

We're having a cold snap here, so it is comfort food night. Homemade mac and cheese is the only thing on the menu.

It got up to 27 today. I made chicken noodle soup and grilled cheeses. Supposed to be that hot tomorrow too here in the middle of SD

We had cassoulet Italian style with sausage. I cheated and used canned cannellini beans. Much easier and quicker than using dried beans and tasted just fine. Husband liked it.

Since we do not host Thanksgiving dinner I made a complete turkey dinner for just the two of us. ( minus any desserts). We love having leftovers.

We had turkey too ;0) But very simple. I tossed a turkey breast into the oven earlier, added a couple of potatoes to bake alongside, steamed some frozen corn. Busy day, and tomorrow and Sunday are busy too...I thought it would be nice to have something for sandwiches (leftover turkey) on hand.
