Supper Tonight

Hi everyone,
Here's the main course for tonight's supper. These are called "Alabama BBQ Ribs" as posted on cooks.com . I have made these before, but I brown the ribs usually before baking, which was my own little twist. This time, I just followed the recipe as instructed, but added some chopped yellow onions on top. It's not a whole recipe and these ribs are not the boneless country style. However, it still looks good to mum and I. These will be served alongside mashed potatoes and baked beans. :). They're baking in the oven now.

This is Glenda's pineapple casserole recipe: GlendaÂs Pineapple casserole 1 cup sugar 6 tablespoons all-purpose flour 2 cups grated sharp cheddar **grate your own 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved 1 cup cracker crumbs --I use saltine, but ritz works too 1/2 cup melted butter Preheat the oven to 350 degrees F. Comments (14)I mentioned on the Mother's Day Menu thread that we were having sub sandwiches on homemade bread. When I cut the loaf open, I take some bread out of the middle, to leave room for a stack of meat, cheese, and fixins'. I save the surplus bread, so tonight I cubed it, then made a breakfast casserole, with some of the left-over ham, and cheddar cheese. Served it with steamed asparagus (homegrown) and broccoli (on sale at Kroger). My son-in-law picked up ice cream on his way home, but I passed on that. Comments (36)When the boys were in the house full time, we had breakfast for dinner every Thursday. I almost always made a large breakfast both weekend days too. Now, with a virtually empty nest. We go out for weekend breakfast or breakfast for dinner at our local cafe much more often. I still make my husband the same "lunch" for his work week on Sunday nights. 5 containers... He has the same thing every day around 9:30 am. Home made english muffin(toasted), hand mixed fried sausage patty, scrambled egg patty and slice of American Cheese. Sometimes some bacon added if I have it already cooked. He takes it apart and nukes it at work. 1/2 c pineapple sometimes with halved grapes or berries added. 10 years agoLooks great. I did a similar braise last night with skinless chicken thighs...
Onions and veg on top and covered...let it go and braise to tender.
12 little chicken thighs under the veg. I've done the same with short ribs.
40 minutes later on a slow simmer...
very tender and yummy.
I take the thighs out and put them in the oven to bake 20 min while reducing the veg sauce...
