Supper Tonight

Hi everyone,

Here's the main course for tonight's supper. These are called "Alabama BBQ Ribs" as posted on cooks.com . I have made these before, but I brown the ribs usually before baking, which was my own little twist. This time, I just followed the recipe as instructed, but added some chopped yellow onions on top. It's not a whole recipe and these ribs are not the boneless country style. However, it still looks good to mum and I. These will be served alongside mashed potatoes and baked beans. :). They're baking in the oven now.

Brad, it looks good to me too. I'm sure it will be delicious. Your Mum probably really enjoys having you cook!

It sure looked good, but it turned out terrible. The flavor of the meat was "off" and mum or I didn't care for it. When I made this before, it was quite delicious (although mum wasn't that big of a fan). Tried a new sauce, too. Mum stuck them back in the oven at 200 degrees for another hour. We'll see how they turn out then. If they're still icky, it's outta here. *sigh of disappointment*

Supper last night was a ham sandwich, potato chips and a beer. We did go high class with the mustard, though. Grey Poupon and all that. Hey, we spent most all day on the river and didn't get off the river until well after sundown. Today it's going to be different. Amberjack is in season in the Gulf and my favourite seafood shoppe just happened to have some. This afternoon it will be grilled amberjack, oysters on the half shell, and seafood jumbo. Have mixed up a batch of Sangria. Red wine, sparking water and slices of apples, oranges, and limes, never the same way twice. Have a key lime pie made just in case we need a desert. No, I'm not cooking yet on my solar cooker. Just waiting for the additional mirrors I have ordered come in. Early experiments are promising. It's another ever so pleasant of a day. Gotta dilemma, though. Alabama and Georgia, who are ranked 8th and 3rd, respectively, play tonight just about the same time that Darius Rucker, Beausoleil, Kansas and 38 Special are playing. Life is full of little decisions....

Last year, I planted two kinds of broccoli. One had big heads with a few side shoots. The other type had smaller heads, but produced many side shoots all summer long until almost fall. I was not able to pick it all during my hospital last summer, as many had gone to yellow flowers. Once I picked them off, the side shoots started to show again. That cabbage photo looked like what I bought as brussels sprout plants some years back. I don't buy plants anymore as they never have accurate descriptions on the tags they come with. Love those soaker hoses!!

I bought a second pasty chef cookie sheet thingie (not sure what they call it).... I pulled them out of the oven to cook supper tonight and told myself I need to make the calzone thingies again. Maybe tomorrow. They really are very delicious.

Last night I actually got to come home after 8 hours of work. Usually it turns into a 12 because we're short. Didn't feel like making dinner so I swung by and picked up Alex and we went to a new-to-us restaurant. He had fried shrimp basket and I ordered a grilled cheese and fries, not supposed to eat bread or potatoes on my diet, but am allowed one day off. It was so good! I tasted a few of Alex's shrimp too, and they were excellent and piping hot right out of the deep fryer. Not sure what I'm having tonight. Not much probably. I no longer have an appetite at all, thanks to the meds I'm on.

Looks great. I did a similar braise last night with skinless chicken thighs...

Onions and veg on top and covered...let it go and braise to tender.

12 little chicken thighs under the veg. I've done the same with short ribs.

40 minutes later on a slow simmer...

very tender and yummy.

I take the thighs out and put them in the oven to bake 20 min while reducing the veg sauce...

Mum just checked them again and they're still tough as nails. :/. Oh well.

It needs time, covered, in a wide sauce pan that can go in the oven...(i do mine on the stove-top), but in a covered oven safe pot...for a three hour braise, it should be tender...give it a long slow braise...

The Coca Cola was supposed to tenderize them like it always does. I did mix it with the sauce and onions and Worcestershire sauce instead of pouring it over the ribs.

Sorry they weren't as good as they looked.... But you learned not to use that recipe again!

Brad, I'd use that recipe in a crockpot, cook it all day, it'll fall apart I'll bet. You could probably even refrigerate them overnight and put them in the crockpot on low tomorrow and keep on cooking them....

Linda, I will be using this recipe again, but using better quality meat. This came from a local butcher shop whose pork chops I had before and they tasted quite the same after pan frying them. They were very good the other times I have used this recipe!

Annie, now there's an idea. I may have to try that in the future.
