New countertops and installing new faucet question

I am getting new countertops installed in my kitchen with a new undermount sink. Very excited about it, but today I found out that the installation will be delayed by a day and a half. I already have the plumber scheduled with plans to go out of town afterwards. Initially, I was told we should wait 24 hours before the plumber should reconnect/install the new faucet, but now they are telling me that it'll be okay if it can only dry for 12 hours or so. Is this really okay or should I hold off on the plumber until I return from my trip?
