Help - granite backsplash is too short

I just had granite installed. Love it! I had laminate countertops before. When the guy came to measure, he measured the laminate backsplash, said "you want a 4-inch backsplash?" and I said yes, thinking 4 inches was standard. He didn't bother to tell me that the laminate backsplash was 3/4 inch higher. Now I have an unfinished strip of caulk/drywall/peeling paint above my granite.

How do I fix this? I am thinking I can sand, spackle, and paint. Is that ever going to be nice and smooth-looking? Or should I put a strip of molding or something up to cover the damage?
