Semi-homeade laktke tips?

Dad wants latkes tomorrow night and I'm staying with the folks and they do not have a food processor, which is how I usually make them. I am not in the mood to grate all those potatoes, and plus I have done it that way and I just don't think they are all that great, the batter turns black by the time I get finished.
Anyone have any recipes for latkes using either frozen shredded potatoes or apparently you can buy pre-shredded potatoes in the diary section around here, I guess people make hash browns out of them. Or frozen hash browns for latkes. Anyway, something that tastes homeade but not with the grating hassle? Mom made them with the blender but I dunno about that. Again, I tried it and didn't think it was that great. My taste and texture preference is the Cuisinart kind, but that's not an option. Also can't get them frozen here like in the big cities!
I guess I can experiment on my own, but I was wondering if anyone has any T&T tips for me. Thanks!
