Indulgent Cooking for Healthy Living

That's the tentative title for a class I will be giving this coming session by special request.

It's only a 4-week class, 4 meetings, 3 hours each.

The basic premise is taking a look at better, healthier ways to eat while at the same time offering truly delicious foods and dishes to do it.

I want to address the key health issues (organic; fresh vs processed; too much fats, salt, sugars; most common food allergies/issues, etc.).

The dilemma is that I have only 4 meetings of 3 hours each to cover this.

What are the priorities? What are the subjects within this?

I don't need recipes right now and I'm not writing a book. I'd like to put my finger on the pulse -- you kids -- of the current thinking.
