HUGE frozen sides--test results

Again thanks everyone for your answers to my earlier question. Here are the results if anyone is interested.

I opened the potatoes and a little of the top layer (slices above the milk line) were brown. I thought I would avoid this by putting cling wrap directly on the top, but obviously that didn't work. Seeing that, I knew I was in trouble. Like everyone said, the thawed potatoes had no firmness left. I'm sure they would have been a mess. I did get to make a cell structure science lesson out of it for my 9-year old.

As for the zucchini, I think it will be okay. (Thanks Linda you gave me some hope for that.) I was able to slice off a small frozen portion and I put it in the oven. When cooked the texture and flavors were fine. It will take a while for the water to cook off, but I've prepared this dish fresh and that's always a problem.

Lesson learned. The good news is that the red peppers and tomatoes made the zucchini dish much more expensive to make. So at least I only had to toss the potatoes. I also told a few women I work with about the experience, and one foodie is going to lend me her mandolin for the redo.
