HUGE frozen sides for party--how to cook?

I thought I was getting prepared for a party while my wife is out of town, but now I think I may have trouble on my hands. We're having a large family holiday party, and I (husband here) prepared two side dishes in advance: scalloped potatoes and a zucchini casserole. The scalloped potatoes are simply layered potatoes (15 lbs!) with butter and milk. (Thanks Fannie Farmer.) But they are in a large, commercial size 14-quart pan. It is not precooked. Simply assembled and frozen. The zucchini is sliced and layered with peppers, onions and tomatoes that have been cooked in a roux. They are in a half size pan, about 7 quarts. The zucchini is not cooked, only the other veggies were slightly cooked. The idea was that come the day of the party, I could cook these and put them in my warming drawer while we completed the meal.

So, how do I cook them? Thawing completely will take forever, and I think it may make everything soggy. Should I put them in the oven for at a lower temp (300) for two hours, then up the temp to 375. The nonfrozen, small recipes call for 375 for about 40 minutes. Covered or noncovered? Since I have the warming drawer, I could do these enough in advance to be safe.

Advice? Help? Will these ever turn out?
