How Much Of Dinner Can I Make Ahead?

I'm hosting holiday dinner for my office tomorrow. To make my life easier, I'm planning to cook as much of it as possible tonight.

Tell me if you think any of the following will suffer noticeably if made a day ahead, refrigerated, and reheated:

- Boeuf bourguignon (better the next day, like stew?)

- Scalloped potatoes (I suck at this anyway)

- Risotto (I have the choice of par-cooking it tonight and finishing tomorrow, or doing it in the pressure cooker tomorrow)

- Bolognaise sauce for the kids (better to do a real, long-cooked sauce today, or a doctor-up-some-jarred-sauce tomorrow?)

The stuff I have to do tomorrow, in the 3 hours before dinner, will then be:

- Beijing crispy roast duck (it'll be all ready to stick in the oven)

- Creamed spinach (spinach will be washed and cut, almonds toasted, shallots prepped, tonight)

- Mirin-braised carrots (I'll have them peeled and shaped and marinating in mirin overnight)

- Receive and plate the hors d'oeuvres, salads, desserts, etc that people are bringing.

(One person can't have dairy, hence the duplication of sides).

No new culinary ground being broken for me here, it's going to be a boring "safe" meal but the logistics are interesting.
