Need a brining expert......

My mom has handed all of Christmas over to me this year...Christmas Eve, Christmas morning AND Christmas lunch (the big one) due to my father's recent illness. So this is my first year to ever cook a turkey. I am interested in the brining technique as it sounds like it produces a very moist turkey...my mother is an excellent cook (from the old country--Greece); however, bless her heart, her turkey is always, well, DRY! My question is this...can I put the turkey in the brining solution during the day on Christmas Eve, take it out after 8 hours or so, store it in the fridge over night and then roast it the next day. Does this totally negate the brining process by it sitting? Must it be immediately cooked after removing it from the brining solution? I don't want to soak it overnight because it's only a 12 lb bird (I have 2) and I'm afraid it will be too salty. Can anyone help me with this? Thanks in advance.
