I'm back! Need to make some final decisions. Expert Advice Needed!

So many of you have weighed in on our kitchen reno project that we started to plan in November. Well, here we are in April - and after going in several different directions, we've finally settled on a plan and are ready to begin (hopefully next week with electric and appliances)

Quick background:

We are painting dark cherry cabinets Simply White. Painting island Ebony. (not quite black)

Keeping perimeter counters (Volga Blue)

New Island countertop - with overhang (quartz, but still deciding on color)

New backsplash - on cooktop wall and wet bar wall

New SS appliances - except for fridge

Double oven cabinet will be modified to include a new double oven and warming drawer beneath.

New hardware (narrowing down now)

New lighting (nothing is picked out yet)

I'm going to post some photos with explanations of what we are doing and where I need help:

Here are three photos that encompass the space.

Below:

This wall will be the most dramatic change, as we are removing all the cabinetry on this wall. A new 20" wide cabinet will replace the far right cabinet. The entire wall will be tiled in a bluish/gray subway tile. Up to ceiling and including the wall to the left of the window. A 42" chimney hood will be installed.

A 36" cooktop will be installed, replacing the 30" cooktop. Installers will cut the granite and center the cooktop over the 30" lower cabinet, so we don't need to do any modifications to our lowers.

We are having the 12" space above all the uppers built up to the ceiling. Thanks to GW for some great examples:

The island will be painted Ebony (not quite black, but not dark gray) and we will install a new quartz top, extended 12 inches to allow for two small stools. Undecided on top - but will be in the white family, not too busy.
