Someone (May?) posted a picture for chocolate peppermint bark. I can't find it here, although I did purchase the ingredients. Can someone help?

This is the one must have. Making it today,

Peppermint Bark

1 Lb bittersweet chocolate
8 Drop peppermint oil
1 Lb chopped white chocolate
3/4 Cup chopped candy canes

Line a 11 X 17 inch baking sheet with parchment paper. Set aside

Melt bittersweet chocolate in a heavy pan over low heat, stirring constantly. Stir in 4 drops of peppermint oil. Spread evenly over pan and chill for about 1 hour.

Melt white chocolate in a heavy pot over low heat, stirring constantly.

Stir in remaining 4 drops of peppermint oil and then add in candy cane.

Spread white chocolate over chilled dark chocolate, spreading to the egde of the pan. Chill 4 hours.

Refrigerate just until just before serving then break into pieces. Will keep in the fridge for 3 weeks ( yeah right!!! LOL)

NOTE: You must use peppermint oil not extract. Extract will cause the chocolate to seize.....ask me how I know.

Is it difficult to remove from the pan without using a springform? Haven't had a chocolate mousse cake in ages. Ginger, Out of the 4 times I have made this cake, I have always used a springform pan. I think it would be very difficult to remove using a standard cake pan.

My MIL found the recipe that I had left at her house last year. Here it is for anyone that would like to try it: INGREDIENTS; Cookie Base: 1 1/2 cups unbleached all-purpose flour 3/4 teaspoon baking soda 1/2 teaspoon salt 1/2 cup unsweetened Dutch-process cocoa powder 1 cup (2 sticks) unsalted butter, melted and cooled slightly 3/4 cup granulated sugar 1/2 cup packed light brown sugar 2 tablespoons water 2 teaspoons vanilla extract 1 1/2 cups (9 ounces) semisweet chocolate chips TOPPING; 1 1/2 cups ( 9ounces) semisweet chocolate chips 3/4 cup (about 5 ounces) crushed peppermint candy ( crush with a rolling pin into smal pieces) DIRECTIONS: Position a rack in the middle of the oven. Preheat the oven to 350 F. Have ready two baking sheets. Prepare the cookie base. In a medium bowl, stir the flour, baking soda and salt together. Sift the cocoa powder onto the flour mixture and set aside. In a large bowl, using an electric mixer on low speed, mix the melted butter, granulated sugar, brown sugar, water and vanilla until smooth, about 30 seconds. Stop the mixer and scrape the sides of the bowl as needed during mixing. Add the flour mixture, mixing just until the flour is incorporated. Stir in the chocolate chips. Leaving a 3-inch border empty on all sides, use a thin metal spatula to spread half of the dough on one baking sheet into a rough rectangle that measures about 11 by 8 inches and is about 1'4 inch thick. Use the palms of your hands to help pat it into an even layer. Repeat with the remaining cookie dough on the second baking sheet. Bake one baking sheet at a time until the top looks dull, not shiny, and feels evenly firm at the edges and center, about 14 minutes. As soon as each baking sheet comes out of the oven, sprinkle 3/4 cup of the chocolate chips over the cookie slab. Let the chocolate chips sit for 5 minutes to soften and melt, then use a small metal spatula to spread the melted chocolate over the cookie, covering most of the cookie. While the chocolate is still warm. sprinkle half the peppermint candy evenly over the slab. Let the cookie bark cool on the baking sheets on a wire rack until the chocolate topping is firm, about 2 hours. Or, to speed the cooling, cool the cookies on the baking sheets for about 30 minutes, then refrigerate them, still on the baking sheets, just until the chocolate topping firms, then remove from the refrigerator. The cookie bark will become crisp as it cools. Break each cookie slab into about twelve 5 to 6 inch long irregular pieces. The cookies can be stored layered between sheets of wax paper in a tightly covered container at room temperature for up to 5 days.

Anna Olson's Ultimate Chocolate Cake Cake 1/2 cup unsalted butter, room temperature 1 1/2 cups granulated sugar 1/2 cup brown sugar 2 egg 2 tsp vanilla extract 1/2 cup water 4 oz unsweetened chocolate, chopped 2 tsp espresso powder 1 3/4 cups pastry flour 1/4 cup cocoa powder 1 tsp baking soda 1/4 tsp salt 1 cup sour cream Frosting 2 cups unsalted butter, room temperature 1 egg yolk, optional 12 oz bittersweet or semisweet chocolate, chopped, melted and cooled to room temperature 2 tsp vanilla extract 1/4 tsp salt 2 1/2 cups icing sugar, sifted Directions: Cake Preheat oven to 350 F. Butter and flour 2 9-inch cake pans. Cream butter and sugars together until fluffy. Beat in eggs and vanilla. In a small pan stir water, chocolate and espresso powder over low heat until melted. Allow to cool slightly before beating into butter mixture. Sift together flour, cocoa powder, baking soda, and salt and stir into batter alternately with sour cream. Divide evenly between the 2 pans and bake for 25-35 minutes, until a tester inserted in the center of the cake comes out clean. Allow to cool 15 minutes in the pans, then turn cakes out onto a plate to cool completely. Frosting Beat butter on high speed, scraping sides frequently, until light and fluffy. Reduce speed and beat in egg yolk. Add melted chocolate and mix in. Add vanilla, salt and icing sugar and beat until smooth. To Assemble To ice the cake top one layer with icing and spread. Place second cake layer on top. Ice the top of the cake and finish with the sides. Chill cake to set, but it is best stored at room temperature (hence omitting egg yolk in frosting, if desired). I made it for a dinner party for eight on Saturday. Instead of using unsalted peanuts, we used extra-large Virginia peanuts--very crunchy--and broke the whole nuts into halves, Did not chop the nuts. We didn't tell anyone that the chocolate chunks we offered them after dinner contained bacon until after they had tasted it. No one said "bacon!" They just liked it. After we told them, some said they tasted and liked the bacon, others (I among them) thought that the bacon flavor should be stronger, maybe increasing the amount by 50%. We served it with small bowls of good vanilla ice cream to give a milder flavor for balance. Also had some nice vintage port in small glasses. I'll make this again, but not soon. I couldnt find peppermint oil either.

So I found a recipe that used White almond bark, red food coloring, peppermint extract and Rice Kripies.

Only made 1/2 the batch because I wasnt sure if what it was going to taste like. It was good. Recipe could be used with choc. bark and skip food coloring.

I found Peppermint Flavor at Whole Foods, which consisted simply of sunflower oil and peppermint oil. I don't think it was as strong as pure peppermint oil, (of course) so I used more than 4 drops. Actually, I didn't have a dropper, and I couldn't control the drops out of the bottle, so I was glad it wasn't as strong, lol. Anyway, it worked fine. Oh, and Chase, thanks for the recipe!

Also, King Arthur Flour has it, but of course, that's mail order and takes time.

I've been making Sharon's peppermint bark for a few years now and I would say it's probably the most popular candy I make. I can find the peppermint oil at Walmart back in the craft section, at Hobby Lobby in the cake decorating aisle, or at a cake decorating store.

Like Tracey said the easiest place to find peppermint oil is at any store that sells cake making supplies. I get mine at Michael's craft store.

I always get so jealous when I read about the peppermint bark at Christmastime. I can buy neither peppermint oil nor peppermints over here.

Well shoot, I found the peppermint flavor. Should of used that instead. The bark did seize up just a tad, but with the rice kripsies it turned out ok. The taste is good.

Never thought of looking in a craft section. Thanks for the tip :)

I made this yesterday for the first time. Putting it out in the garage fridge isn't working. I can't stay out of it. YUM! Going to have to make a second batch! LOL

If you like peppermint and chocolate you may want to give these a try. It's not candy but they taste just like the Girl Scout Mint Patty Cookies to me.

CHOCOLATE MINT BROWNES
1 c. flour
Â½ c. butter or margarine, softened
Â½ tsp salt
4 eggs
1 tsp vanilla
1 can ( 16 oz) Chocolate flavored syrup
1 c. sugar

FILLING
2 c. powdered sugar
Â½ c. butter or margarine, softened
1 Tbsp water
Â½ tsp mint extract
3 drop green food coloring (opt)

TOPPING
1 pkg. (10 oz) Mint Chocolate Chips
9 Tbsp butter or margarine

Combine first 7 ingredients. Beat at medium speed for 3 minutes. Pour batter into a greased 13x9x2 baking pan. Bake at 350* for 30 minutes. Top of brownies will still be wet. Cool completely.

Combine filling ingredients and beat until creamy. Spread over cooled brownies. Refrigerate until set.

For topping melt chip and butter in microwave or over low heat in a saucepan. let cook until lukewarm, stirring occasionally Spread over filling. Chill and cut before serving. Makes 5-6 dozen.

Mike, are you talking about those thin mints they sell? I've wondered if there's a way to make those home made, but then I scold myself because I should support the Girl Scouts and buy them from them. lol

A little off topic, but funny story. When I went to Whole Foods looking for the peppermint oil and didn't find it, I went to check out, and the cashier, as always, asked if I found everything. At first, out of habit, I told him yes, then I said no, and told him about the peppermint oil. He said it should be in the body care section. I didn't go for that, telling him it's for cooking. He actually shut down his register, with people in line behind me, and took me to find the oil! I was amazed and rather embarrassed, but he was off faster than I could stop him. I can't say I've ever had a cashier do that before.

Sally they taste like the thin mints but are brownies so they aren't thin or crisp. But when the Girl Scouts aren't selling and you have a craving for those thin mints give these a try to get your thin mint fix.

mock thin mints are made by adding a few drops of peppermint oil to melted chocolate and then dipping ritz crackers in it.
