Chicken hot wings recipes?

Hi all, I am mostly a lurker here, but thought I would pick your brains for help with my winter project.

I made three different hot sauces this fall from home-grown peppers - one is from jalapenos (mild), one from serranos (medium), and one from habaneros (hot hot hot!). In addition to different levels of heat, all three have different flavors as the peppers themselves taste different. My goal is to "perfect" a recipe for chicken wings (buffalo wings? I don't know if there really is a difference between "buffalo" hot wings and hot wings).

I have never made these before and have searched this forum as well as googling for recipes. Here's what I've found and my questions. Anyone that can help me out - I greatly appreciate it! I think I will start with just one batch made only with the medium sauce. Then I will start mixing sauces to find the flavor and hotness I like best.

OK, first I can buy "drummies", largish wings, only the meaty part. That seems like a good start to me. Most of the recipes I found say to deep fry them at 365°. My question here is how I know when they are really done. I have had wings in restaurants where the meatiest portion is not done - yuk! Can I deep fry them then bake for a bit? Vice versa?

Most recipes call for a little melted butter, the hot sauce, and some vinegar. Just add the cooked wings and toss to coat. Is there some way to REALLY coat the wings or will it stick well enough this way? Can I thicken the sauce somehow?

Actually, I guess that's all my questions for now, any help would be welcome.
