Baking coffee cake, which pan size to use?

My coffee cake recipe calls for a 9x9 baking pan, which of course I do not have. But I do have 8" and 9" round. Does it matter which I use? I suppose if I use 8", I should not put in all the batter? Or just cook a little longer?

Never mind, now I realize the 8" is way too small, but probably won't work for two coffee cakes. I'll use the 9".

It depends on the height of the pan also. A 9x9x1 1/2-inch square pan holds 8 cups. A 9x9x2-inch square pan holds 10 cups. A 9-inch round pan with 2-inch sides will hold 8 cups.

I'd recommend your 9-inch round and fill it 2/3 full. If there's batter left over you can put it in a muffin tin. Fill any extra empty cups with water.

Whatever the recommended baking time, start checking early, especially if you have extra batter in a muffin pan.

Perfect for fall and my boyfriend LOVED this one 1 boxed spice cake mix 1 can easy pumpkin pie filling (15 oz) I had to get a 30 oz can and use half maybe you'll have better luck finding a small can 1/4 cup milk It's that easy...mix them all together and bake. Let cool in freezer for about an hour. Fill with (softened) vanilla ice cream (i like old fashoned but it's according to preference). Ice with cream cheese icing. Most recipes for a bundt or tube pan will make successful layers, but not all. Some do not have the structural strength to be layers. Shirley Corriher discussed this in Bakewise. Very likely yours will work. If you want to be absolutely sure, bake one in layers ahead of time as a test, and just freeze it for later. Or, if the objection to the bundt form is only a love of frosting (and German chocolate cakes are all about the frosting) frost the bundt cake. A plain tube pan is a little better for this, maybe.) You can even split it into layers and frost between them.

I would go with 8x8 and make cupcakes with the 1/5 of the batter. But that's because I don't the temp adjustment for pyrex, as I found out on Monday. ;)

There's a big difference in quality. If you fold the wall of a silicone baking pan, you should NOT see any white at the fold nor should there be a crease where you folded it. White indicates it is not high content silicone, but that fillers have been added. Those pans will not bake nor release as well as higher quality pans. I haven't tried the bigger pans, but did have some of the muffin and fancy shaped ones. (I gave them to a friend when we moved because she bakes weekly and I just don't bake much anymore.)

Thank you, Carol. I struggle with this issue every time I make this recipe. It would be so easy to solve with the simple purchase of a 9" pan, and I'm putting it on my shipping list RIGHT NOW! LOL!!
