CROCK POT ZUCCHINI BREAD 2 eggs 2/3 c. vegetable oil 1 1/3 c. zucchini, peeled and grated 2 tsp. vanilla 2 c. flour 4 tablespoons sugar 1/4 tsp. salt 1/2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 to 1 c. chopped nuts With mixer, beat eggs until light and foamy. Add oil, sugar (1/4-1/2 cup depending upon how sweet you prefer it), grated zucchini and vanilla. Combine well. Stir dry ingredients with nuts. Add to zucchini mixture. Mix well. Pour into greased and floured 2 pound coffee can or 2 quart mold. Place in crock pot. Cover top with 8 paper towels. Cover and bake on high 3 to 4 hours. DO NOT CHECK OR REMOVE cover until last hour of baking. PUMPKIN BREAD 1/2 c. oil 1/2 c. white sugar 1/2 c. brown sugar 2 beaten eggs 1 c. canned pumpkin 1 1/2 c. sifted flour 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg or 1 tsp. pumpkin pie spice 1 tsp. soda 1 c. chopped walnuts 1/2 c. dates, cut up Blend oil and sugars, stir in eggs and pumpkin. Sift dry ingredients and add to above. Stir in nuts and dates. Pour butter into greased and floured 2 pound coffee can. Place can in crock pot (Rival or any tall crock pot). Cover top of can with 6-8 folded paper towels. Place lid on pot. Bake at high for 2 1/2 to 3 1/2 hours. No peeking until last hour. CONVENTIONAL OVEN: In loaf pan, bake at 350 degrees for approximately 1 hour.

It shouldn't be a problem. My mother always made her pound cakes in loaf pans rather than a tube pan. She always froze the second one for later. You may not need to change much in terms of baking. Recipe below. Natal, I've never had the need to flour a cake pan. Is there a reason to flour them? I also detest the taste of flour on a cake. Are the pans floured just to get the cake out of the pan? I usually don't do that, but if so, then I'll flour it tomorrow. Amy said to spray the parchment paper, so I'm going to do that just to be on the safe side. :) Red Velvet Cake 1 box White Cake Mix 1 small box Instant Chocolate Pudding 2 c. Milk 2 Eggs 1 small bottle Red Food Coloring 1/4 c. Oil Mix these ingredients well. Mix together 1 T. Vinegar 1 t. Baking Soda Add the above to the batter. Beat well. Bake in 2 round cake pans or a 9 x 13 cake pan, at 350. Frosting recipe below. Back to baking the cake, this is when it gets tricky. This cake can fall if you're not careful. For round cake pans, it generally takes about 20-30 min., until toothpick comes out clean. For a 9 x 13 pan, it could take up to 45-50 minutes. When the cake looks done, crusted around the edges, very GENTLY take it out of the oven and do toothpick check. I mean you have to be very gentle. I learned the hard way. lol. Frosting: 8 oz. softened Cream Cheese 1 stick softened Butter 1 t. Vanilla 1 lg. bag Powdered Sugar or to consistency..you want it thick but not too thick you can't stir it. Mix all together and spread on cooled cake. Sprinkle with coconut if desired. If you make a 9 x 13, you'll have a lot of frosting left, even if you put it on thick. And you want to put the frosting on thick! This cake is so rich & heavy and when you eat it you'll think you've died and gone to Heaven. No kidding! You'll see why it won a blue ribbon!

I'm a parchment paper fan, too.... You can also line non-stick baking sheets with a Silpat if it's something that requires stirring (like granola or roasting vegetables) and you don't want to risk marring the surface. I have switched to silicon kitchen utensils (or will use wood utensils) to prevent scratching the surface of non-stick baking sheets. If you'd like a "better" pan spray, give Bakers & Chefs Cooking Spray a try (I order it from Amazon.com, used to get it at Sam's Club). Where Pam, and other brands darken and stick to pans after several applications, this brand (used by professional bakers) doesn't darken under heat and get sticky. Just be sure to wash the pans carefully (add a little DAWN Ultra Platinum and water to the pan while washing it).
