Angel cakes don't use any yolks. SPONGE CAKE 6 eggs 1 TBL lemon juice 1 tsp grated lemon rind (no white part, only the yellow) 1 cup sifted cake flour Pinch of salt 1 cup sugar Preheat oven to 325°. Lightly grease & flour the bottom, not the sides of a 10" tube pan. Break the eggs into the large bowl of a mixer, add the lemon juice & grated rind & beat the mixture at highest speed until soft peaks form, 12-16 minutes. while the eggs are being beaten, sift together the flour & salt onto a piece of waxed paper. Continue beating the eggs at highest speed (after soft peaks form) & pour the sugar in a fine stream over them, taking 2 1/2 to 3 minutes to add all the sugar. Change to lowest speed & sift the flour & salt over the surface of the mixture as the bowl turns, taking 2 1/2 to 3 minutes to add all the flour. Scrape the sides of the bowl & beat at lowest speed 1/2 minutes. Pour the batter into the prepared pan & bake 50 minutes, or until a toothpick inserted near the center comes out clean. Invert the cake pan & set it on a rack to cool. Prop it up if necessary so that the air can circulate between the cake & countertop. Deanna, that was my recipe all right. Grandma made it when I was growing up and it was always one of my favorites. Soonergrandmom, I don't know about the nuts changing texture, I almost never add the nuts because I don't like nuts baked in things. Not in banana bread or in cookies or in that hot fudge pudding cake, not even in fudge. Odd, I suppose, since I like nuts by themselves. Hmmm..... OK, a cake recipe for that 8x8 pan. Oh yeah, gingerbread! I just love it, and I love maple too, so this was right up my alley.... OLD-FASHIONED GINGERBREAD WITH MAPLE WHIPPED CREAM Yields one 8x8 inch cake. If you like, dust the gingerbread with confectioners' sugar and present it on a platter. It's homey enough though to serve straight from the baking dish. 1-3/4 cups plus 2 Tbs. all-purpose flour 1-1/2 tsp. baking soda 2-1/4 tsp. ground ginger 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves Pinch salt 5 Tbs. butter, softened at room temperature 1/3 cup sugar 1 large egg 3/4 cup dark molasses 3/4 cup cold water 1 cup heavy cream (not ultra pasteurized, if possible) 1/4 cup maple syrup Heat the oven to 350 degrees F. Butter an 8x8 inch cake pan. Sift together the flour, baking soda, ginger, cinnamon, cloves, and salt onto a sheet of waxed paper. Set aside. In a large mixing bowl, beat the butter until light and creamy. Add the sugar and continue beating until light and fluffy. Add the egg and beat until well combined. Scrape down the sides of the bowl and pour in the molasses in a slow, steady stream, beating all the while. Add half of the sifted dry ingredients and mix just until well combined. Mix in the remaining dry ingredients. Slowly pour in the cold water and stir until well incorporated. Pour the batter into the prepared pan and bake until a skewer inserted in the center comes out clean, 35 to 40 minutes. Let cool in the pan about 1 hour before serving. Beat the cream until thickened. Slowly pour in the syrup and continue beating until the cream holds soft peaks. Cut the cake into squares; serve with the whipped cream. I also use a small pan like that 8x8 pan for fruit cobblers and crisps, since there are only Ashley and I here. Grandma's Blueberry Crisp would fit in nicely, can be adapted to use apples, peaches or cherries or whatever else you like and can get readily. I use frozen fruit all winter to make it too. Blueberry Crisp-Grandmas ================ 3 cups blueberries, fresh or frozen, unsweetened 2 tbls lemon juice 2/3 cup brown sugar 1/2 cup flour 1/2 cup quick oats 1/3 cup butter, softened 3/4 tsp cinnamon 1/4 tsp salt . Heat oven to 375. Arrange berries in ungreased square baking dish (8 inch) and sprinkle with lemon juice. Combine remaining ingredients until crumbly. (I use a pastry blender, grandma used two knives). Crumble topping over berries and bake until topping is lightly browned and berries are hot, about 30 minutes. Makes 4-6 servings. Annie

The question of baking it in a shallower pan depends on the size of the cake....you want toe batter to fill the pan nicely, not be a "cookie". Here's a classic Texas Sheet cake....so you can judge the quantity of the batter.....and also cooking time. Hope kitty is eating.... Texas Sheet Cake 1 stick butter 2T cocoa 1C water, boil these together in a saucepan then- mix with while hot, 2C flour, 2C sugar add 1/2C buttermilk (milk with 1t lemon juice) 2 eggs, 1t soda, 1t vanilla, 1t salt and beat until smooth. This batter is thin so dont fret. Pour it into a 11 x 17 jelly roll pan bake 350 for around 20-30 minutes until tested toothpick is clean. While still hot pour icing onto top, smooth and let it sit. Icing 1/4 C butter 1/4 C milk 1T cocoa, boil then add approx 2C powdered sugar, 1t vanilla and spread onto cake right when it comes out of the oven. Of coarse no one in this house ever waits until its cooled. Enjoy.

It depends on the height of the pan also. A 9x9x1 1/2-inch square pan holds 8 cups. A 9x9x2-inch square pan holds 10 cups. A 9-inch round pan with 2-inch sides will hold 8 cups. I'd recommend your 9-inch round and fill it 2/3 full. If there's batter left over you can put it in a muffin tin. Fill any extra empty cups with water. Whatever the recommended baking time, start checking early, especially if you have extra batter in a muffin pan. Carol
