Angel cakes don't use any yolks. SPONGE CAKE 6 eggs 1 TBL lemon juice 1 tsp grated lemon rind (no white part, only the yellow) 1 cup sifted cake flour Pinch of salt 1 cup sugar Preheat oven to 325°. Lightly grease & flour the bottom, not the sides of a 10" tube pan. Break the eggs into the large bowl of a mixer, add the lemon juice & grated rind & beat the mixture at highest speed until soft peaks form, 12-16 minutes. while the eggs are being beaten, sift together the flour & salt onto a piece of waxed paper. Continue beating the eggs at highest speed (after soft peaks form) & pour the sugar in a fine stream over them, taking 2 1/2 to 3 minutes to add all the sugar. Change to lowest speed & sift the flour & salt over the surface of the mixture as the bowl turns, taking 2 1/2 to 3 minutes to add all the flour. Scrape the sides of the bowl & beat at lowest speed 1/2 minutes. Pour the batter into the prepared pan & bake 50 minutes, or until a toothpick inserted near the center comes out clean. Invert the cake pan & set it on a rack to cool. Prop it up if necessary so that the air can circulate between the cake & countertop. Grease and flour a 9 x 13 baking pan. Cream sugar and butter. Alternately add eggs and flour with dry ingredients and sour cream. Add vanilla (batter will be thick). YEASTED CAKE MIX COFFEE CAKE 1 pkg. (18.25 oz.) yellow cake mix, divided 1 cup all-purpose flour 1 pkg. More often than not, when you combine waxed paper with cake, especially a moist carrot cake, the paper tends to disintegrate, depending on how long it is in contact with the cake. Parchment paper tends to hold up a lot better, so you might want to try that. If parchment paper is not available, use what most cake decorators have relied upon for yearsPan Coating. I blogged about this years ago, and all it consists of is, equal parts shortening and flour (with a squirt, or two, of a neutral oil [e.g. Canola]) to make the mixture easier to brush onto the pan. A little Bundt Pan history... The cast-iron kugelhupf pan is common in Europe and in 1950, a group of Minneapolis women asked Nordic Products owner H. David Dalquist to make an aluminum version of the pan. Ten years later, the new Good Housekeeping Cookbook showed a pound cake baked in one, and suddenly every woman wanted a Bundt Pan. The 1966 Pillsbury Bake-Off Contest was won with the "Tunnel of Fudge Cake". If you would like that recipe, I'll be happy to post it. In 1972 the grand prize winner in the Pillsbury Bake-Off Contest was a Bundt Streusel Spice Cake and 11 top winners also called for a bundt pan. I'll see if I have that booklet in my collection. So the Bundt cake pan is a newcomer in kitchens with more than forty million pans in existence in America. Generally, cakes that have too much sugar in them to have good structure are used in recipes using a tube or Bundt pan. Which is different from a standard cake.
