Snow is coming - time to do some cooking

I remember when we were young, Dad would cook when we had snow storms. So with a blizzard heading to Long Island, I made his sauce and meatballs. The house smells wonderful and homey and although we won't be eating this tonight, we'll have out meatballs and stuffed shells tomorrow when I bring it to make a shiva call, assuming we're able to travel.

Tomorrow I'll make Oreo truffles (anyone else notice that they're making regular Oreos smaller)and see what else I can cook up with what's on hand.

Tonight a few friends from the block are coming over for dinner and a movie and one of they guys is bringing his home-made squash soup, a nice cozy way to start the meal. Just burgers (in the cast iron - doesn't get better than that) and some baked fries. Wish I would have thought ahead to make a comfort food for tonight, but it's too late now. Not sure what movie we'll be watching, but the fire is ready and we'll all be very cozy tonight.

Sue, I got that Oreo truffle recipe here and had my granddaughter make them this year when she came to help me bake. I do not really care for them. I couldn't figure out what the rave was all about. So, I took them to work, along with my other Christmas goodies, and guess what got the biggest rave??? Yep. Oreo truffles. Everybody liked them. So, I guess we all have different tastes. Just cause I don't like something doesn't mean it's not good. I might just have a "weird" taster.
Yep. I now have to make these to take to work every year.

I made snickerdoodle blondies, just took them out of the oven. My neighbor has a big pot of chili, I'll bring the salsa, chips and cookies. Should be a cozy night.

We have about 8 inches of snow, at least in my driveway, looks like it's deeper farther away from the house, and it's still coming down hard and the wind is picking up.

I have a pot roast, I'll put that in the slow cooker tomorrow and have it for dinner when my son and his fiance come over. Hopefully he'll be able to get the snow blower working and blow me out.

I got the tree up and am decorating it now. I'll wait and let the DGC help put some of the ornaments, etc on, when they get here Tuesday. It should be an interesting week.

Let's see, what can be made ahead and frozen? Chicken pot pie, or even better since you're at the ocean, Lobster Pot Pie, I saw Ina Garten make one and couldn't figure out why I'd never thought of it. She used puff pastry dough, making it fast, instead of homemade dough. Cabbage rolls do well made ahead and frozen, then baked with the sauce when needed, or just cooked all day in a crockpot. Macaroni and cheese is easy and fast to put together and nearly everyone likes it. A "taco bar" has been discussed here many times, and it's something that people can put together as they like, you can use ground meat, marinated chicken, pulled pork or beef, or all or any combination, and some tortilla chips along with the toppings could yield nachos and taco salad for those who like that. LindaC's idea of meatloaf is a good one, and a couple of roasted chickens can yield hot chicken sandwiches, that above mentioned pot pie, chicken tetrazzini, chicken salad sandwiches, chicken enchiladas. You can't go wrong with a couple of roasted chickens. Your leftover roast can yield a shepherd's pie too, my girls loved it, along with Spanish Rice made with ground beef to make it a full meal. As well as dinners, how about breakfast? Lots of breakfast casseroles are quick and easy, and I make Woodie's Creme Brulee French Toast the night before and just bake it in the morning. The smell alone got my kids out of bed! Biscuits and gravy are pretty fast, if you bake biscuits the night before for supper and then heat them in the morning. BreaKfast burritos are easy to make ahead and freeze, as are "McMuffins", which then only need thawing and heating. Oatmeal cooks overnight with fruit in the crockpot really well too. I'm sure you have cookies, brownies, desserts covered. LOL Cookies and brownies freeze well, but the dough can also be made ahead and refrigerated for a day or two, and baked off as needed. Oh, and I have a cinnamon roll recipe that calls for making the dough the night before, letting it rise in the refrigerator and baking them the next day for hot, fresh cinnamon rolls, if you're interested in that. "..as for an obit, who knows if newspapers will even be around...." Obituaries are online now. Funeral homes in my area publish detailed obituaries on their sites as part of the funeral package. Newspapers nowdays have websites listing the obituaries they publish in newspapers. A funeral director told me the only reason they publish in newspapers now is that older people can't wrap their head around the idea of an online obituary and insist on spending hundreds of dollars to still put one in the newspaper. I'm sure that will change in years to come as people who were born in the Internet age die and see the Internet as the sole form of communication. The problem with obituaries is that they are written by family members and are filled with outright lies and exaggerations. When the "info" is submitted for publication no one 'fact checks' it like they would for an article and it is treated just like any other ad in the newspaper. When my uncle died, the person who wrote it up put in that he had received his bachelors degree even though he had never even attended college. My uncle was always resentful that he had not been allowed to attend college so I guess the person who wrote that figured that that made it all better by "fixing" history. A lot of people noticed and brought it up at the memorial service.

This thread, which I didn't catch the first time around, made me think. In general, I cook to eat and feed my family. However, I do enjoy baking for special occasions. I think that if I didn't work outside the home I would cook more...and be more adventurous. But, I work and have a long commute so by the time I get home I have to make fast meals with little time for creativity or major prep work. So, we eat a lot of frozen veggies--as is out of the bag, pre-cooked meats warmed up, pasta, soup, occasionally waffles/pancakes/eggs, potatoes, etc. I.e., for the most part things that I can cook fast. One up side to this is that our meals haven't changed that much w/o a kitchen since we do have a MW, Toaster Oven, and hot plate to cook with! One very big downside to this, though, is that my children are not learning to cook like I did from my mom. Back on topic... After finding this site and reading about zones, I realized that one thing that I really wanted was a baking center. So when my kitchen was being designed I had it in the back of my head that whatever we ended up with had to have an area I could designate my "Baking Zone", preferably near the ovens--with room to roll out dough, spread out cookie sheets, and have cookie cutters spread out all at the same time! The other thing I got from this site was our window...having the window down to the counter (OK, not cooking-related, but a very important design element!) Our very first plan that our KD came up with had input from us...but a very naive/ignorant us! (Before GW...BGW!) Then....I found this site.....and the changes began. Actually, I posted that original plan and asked for help (and also asked my KD to start over w/no island) Many, many people here helped me come up with a plan over several weeks (months?). We finally came up with a plan that has changed little since then. Interestingly, when I took away the island "must have", my KD came up with a plan very similar to what we came up with here. The only 3 differences were (1) no mini peninsula, (2) a 36" pantry cabinet rather than a corner pantry, and (3) no separate Message Center cabinets. My KD wasn't completely happy w/our differences, but she, wisely I thought, told me to go home and mock up what I wanted to see how it would work (same advice I got here!) Well, the mock up was great! It proved that I did indeed want the mini peninsula (I liked it so much I left the mock up in place until demo and used it!) When I told her the results, she didn't argue, she accepted it telling me it's my kitchen, so ultimately it's up to me. So in the end, my design was/is based on what I wanted, not what the KD wanted. [If only someone else had measured my kitchen and she was given more authority, I think a lot of subsequent problems would have been avoided.] Our kitchen isn't done yet, but it's close...so I can't yet tell you how it is going to work for us...but we are so...

Thanks Rita Re alternate cooking weeks: some things you do for maintaining marital harmony :) because our grocery shopping, meal palnning, our cooking styles and our clean up routines are so opposite to each other.. in fact that's true for a lot of how we both think and work... so different .... reminds me when we were at Sedona many years ago and got our auras read(it's the new age method where they read the energy you generate as colors ). And our aura reader was amazed that DH and I were Married because our auras were so contrasting, none of our colors matched..except this teeny tiny bit of green ..and she claimed that's what made us click in the cosmic sense. We both had a good laugh about it afterwards anyways back on the kitchen : our current kitchen is one cook\one eat space. Wonder if our cookin schedules will change with our new kitchen ....

All sounds wonderful Sue! Its snowing here in Jersey too - not so much at the moment, but we're expecting a boatload later tonight and through the night.

Marinara with sausage on our menu for tonight and the house smells great from that cooking. Pot roast and a crockpot lemonade chicken will happen tomorrow - for my parents freezer and for our freezer too - and I think that will keep us warm cozy and sniffing good smells.

Snow is now coming down strong in Jersey. I have a pot of barley soup on the stove and plan to stay inside and bake all day tomorrow. Biscotti for the neighbors, assorted cookies for family and the kids are insisting on the Oreo truffles. They won't let me forget that we didn't make any last year...they're requesting a double batch to make up for it...LOL

Luckily, we are over and done with it. I live just outside of Charlotte, NC. Friday, we had rain, sleet, snow, then sleet, then snow. Woke to ice, ice, ice as usual. Less than an inch. We are always on the cusp of snow, but always seem to get ice. The mountains to the east protect us.
It all melted today, except a few ice shred on the grass.
Luckily, it wasn't too heavy. Drip, Drip, Drip...

I got my "ice walkers" out for my shoes, when it was still very icy, and walked to my shed to get my dough out of my freezer and started baking today. I have a lot of folks to give cookies to. I will continue tomorrow.
I envy you folks that can look out the window and see snow falling laying a quiet, white blanket!
Stay safe and I hope none of you lose your power.

Question: Can one take the oreo truffles to work and leave them out for awhile for folks to take? Or do they need to stay refrigerated??? Can you put them in with a cookie box? Or would I be better off just processing them, and dipping them in chocolate without the cream cheese??
