Thanks for a "thumbs-up" gluten-free recipe... Brownies are a great place to use gluten-free flour/s. Even recipes that contain flour don't have enough flour to hold the structure by their very design, and brownies are not dependent on gluten like other cakes and breads. Because of the high proportion of fat from eggs, melted chocolate, butter, and sugar, it puffs in the oven and collapses in that lovely pool of of fudge. The sugar raises the temperature which helps set the egg proteins. Those proteins coagulate and link with the other ingredients. The eggs also contribute leavening, so they don't require a chemical leavener. One egg in a recipe usually is used as a binder, while 2 or more eggs, depending on the ration of ingredients, contributes leavening. Brownies are one food that are difficult to make without eggs, or by using egg substitutes like tofu, flaxmeal, etc. If you haven't already made one, you might also like Flourless Cakes, which are also made with ground nuts instead of flour. You'll never believe how cake-like it is. I use almond flour, which I purchase in 5-pound bags from Honeyville Grain. One of my favorite cookbooks is "The Gluten-Free Almond Flour Cookbook" by Elana Amsterdam. I also use coconut flour, another great low-carb, gluten-free flour. papillon, here it that recipe, I pulled it from another thread Decadent Brownies (Ann T) 1 Cup butter 20 Ounces chocolate 1-1/2 Cups sugar Pinch of salt 4 eggs 1 Cup flour vanilla to taste 1 Cup toasted pecans/walnuts (Optional: use 3/4 cup brown and 3/4 cup white sugar, or Add a shot of espresso) �� Method One Melt chocolate and butter in microwave bowl. Beat in sugar and salt. Beat in eggs add vanilla. Do not over mix. Mix in flour. Mix in pecans/walnuts. Pour into rectangle cake pan that has been lined with tin foil and rubbed with butter. Bake in oven at 350 for approximately 30 minutes. Do not over bake. Should still be soft in the middle. Put into freezer immediately for 1 hour or until cold. Cut into 8 bars and wrap each in plastic wrap and freeze. Method Two Another Option. Both methods are good and I use them interchangeably. Melt butter and sugar together over medium heat until the butter has melted and the mixture is smooth. Add the chocolate and stir until chocolate melts. Continuing stirring until the mixture is smooth. Add one egg at a time and mix until each is well incorporated before adding the next egg. Add vanilla (and espresso if using). Stir in flour and salt and mix well. Stir in the pecans or walnuts and pour into prepared pan. Bake in a 350 �F for approximately 30 minutes. Do not over bake. Brownies should be set in the middle but still slightly soft. Place immediately in the freezer. When cold, remove and cut into bars. Wrap each bar in plastic wrap and store in the freezer. go for it, they are delicious. Gild the lily with a chocolate ganache, that's yummy too. Annie

There is another bean that starts with an "A", but I can't remember exactly what it's called. It is supposed to be a slightly sweet bean, and is used in Asian deserts. I wonder if that bean could be used in this recipe if someone really wanted to make it. Lars, I completely agree with you. There's no reason to try to make fake meat or fake cheese. Just use good ingredients that are what they are, and something real from that. Having said that, I will on occasion eat a vegetarian hot dog or fake hamburger patty, just so I can have a hot dog or hamburger, but not very often. Sally

Spinach Brownies -- sheshebop 1 pkg. (10 oz) frozen chopped spinach, thawed 16 oz. cheddar cheese, shredded 1/2 cup chopped onion 1 tsp. salt 1 tsp. baking powder 1 cup flour 2 eggs, beaten 4 T. butter, melted 1 cup milk I also added 1/8 tsp nutmeg Preheat oven to 350. Spray 8 x 12 baking pan with cooking spray. Drain spinach in colander and squeeze out excess moisture. Combine cheese, spinach, and onion in large bowl. Mix. Stir salt and baking powder into flour and mix with the spinach. Mix eggs, butter, milk and stir into other ingredients. Pour into pan. Bake for 30 minutes
