Just what I've always wanted -- brownies that give me gas. Very strange. I can think of better things to add to brownies.

Yeah, I have to really limit my personal legume consumption. None is best. But I've heard if you eat beans every day, you develop the enzyme with which to digest them efficiently. I don't think I'd survive the time period required. Alice would make me move out and I might explode in the meantime. A few months ago we got on a hummus kick. I made a container of hummus and we were dipped all kinds of veggies in it, including broccoli. Never again! We were in so much pain, not to mention being socially unsuitable for anyone else.

I checked out the rest of the blog and it really is full of delicious looking and interesting vegetarian recipes and commentary. I've bookmarked it for further use. She is in San Francisco - relatively close to me.

I remember seeing that recipe a few years ago when it was published in some type of cookbook meant to sneak healthy foods into your kids diets. I eat beans in some form (hummus, homemade black bean dip, etc...) almost every day and I don't have any trouble. I do have trouble when I eat a bunch of cauliflower or broccoli. Must be a different enzyme!

Barnmom that could be an interesting recipe. One would certainly get plenty of healthy fiber from those brownies but I wonder how it would taste without so much butter. I wouldn't mind the beans and I have agave syrup but would cringe at putting so much butter in anything.
(You can see I haven't baked for ages, lol.)

Nice website with much information and recipes and I will take a better look at it when I have more time.

My friend was just telling me about these, and how delicious they are. Her kids love them too. She said it's a Weight Watcher's recipe. I plan on trying them.

Oh, but after reviewing that recipe, I realized that my friend makes hers by pureeing a can of black beans with the liquid, and mixing them with a box of brownie mix. Then she just bakes them per the instructions. But still, very interesting.

I'm with Bubbe, like the website, but not sure about the brownie. Maybe if they were called Beanies or something? I would taste them if someone else made them, but definitely something I'd never make. Who wants a healthy brownie anyway?

Colleen, I bet I have that recipe somewhere... I am a child of the early 70s!

I like the Sushi Bowl recipe and think I'll try that one soon. I love sushi but have no interest in making it myself. I also want to explore the farro, bulgar, and quinoa uses, too. While I doubt I'll ever entirely give up a good filet mignon, I am eating less meat.

Vanilla's a seed pod, not a legume. I don't see the point of these, myself, and I like beans.

That's not an insane amount of butter, to my mind. Butter tenderizes all the fiber and gives you the satisfied feeling. Without the fat, you'd need to eat about six to feel sated.

But the comments on the original site scare me. Replacing the eggs with applesauce? No wonder so much "health" food tastes so bad--these people know nothing about cooking.

I had to laugh at that last comment! My recent experience totally agrees! Last week I ran into Whole Foods after dinner and the first case that you pass is the "bakery" dessert case. I saw a vegan chocolate pudding that called to me (remember I'm lactose challenged)-- I thought it had marshmallows on top. UGH! The "pudding" was disgusting and the "marshmallows" turned out to be cubes of tofu. The pudding was gritty and awful. One taste and in the trash can it went. $3.00 down the drain!

I generally do not like "vegan" or "vegetarian" recipes that are trying to be something they are not. Kevin and I used to go to the Tofu Festival in Little Tokyo (last year was the last one), and a lot of the recipes weren't that good. Plus one can only eat so much tofu in a day. There are plenty of great Japanese recipes that are vegan (or can be with very slight adaptation) that I like very much, just as I like Tabbouleh, which is also vegan. I didn't especially like tofu cheesecake, however, although it wasn't terrible.

I just made the black bean/brownie mix version for the weight watchers crowd at work and thought they were rather "gluey." But then again, I'm not much for chocolate so I'm maybe not the best one to judge. The women at work seemed to like them, especially because they got to have brownies and still not blow their "points budget" for the day. No one guessed the secret ingredient until they'd already declared the brownies tasty, so that's something...

There is another bean that starts with an "A", but I can't remember exactly what it's called. It is supposed to be a slightly sweet bean, and is used in Asian deserts. I wonder if that bean could be used in this recipe if someone really wanted to make it.

Lars, I completely agree with you. There's no reason to try to make fake meat or fake cheese. Just use good ingredients that are what they are, and something real from that. Having said that, I will on occasion eat a vegetarian hot dog or fake hamburger patty, just so I can have a hot dog or hamburger, but not very often.

Sally, I think you are thinking of the adzuki (with various spellings including azuki) bean. But I think it takes processing or fermentation of some type that converts the starches to sugars when they use it in desserts.

That's it. I didn't know it has to be fermented. I've seen them for sale at Whole Foods in their bulk section. I've been curious to try them, but haven't been sure what to do with them. But, that is another topic from this thread.

All that butter would hold me back from making them too... All that saturated fat on top of the 4 eggs...

I did notice that the recipe doesn't contain any flour... And I do know that some people. who can't eat wheat products, grind dry beans to make flour for many things... You can't help but wonder if a great brownie could be made without all that fat, egg whites and beans...
