It was a big success! As a bonus, it was great as part of a vegetarian dinner. Here's the recipe: Spinach Brownies (Sheshebop) 1 10 oz. package frozen chopped spinach, thawed 16 oz. cheddar cheese, shredded 1/2 cup chopped onion (I use a whole small onion) 1 tsp salt 1 tsp baking powder 1 cup flour 2 eggs, beaten 4 Tb. butter, melted 1 cup milk Drain spinach in colander and squeeze out moisture (I squeeze with my hands to get it very dry). Combine cheese, spinach, and onion in a large bowl. Mix together. Stir salt and baking powder into flour and mix with spinach mixture. Mix eggs, butter, milk and stir into other ingredients. Pour into buttered 8x12 pan. Bake 35 minutes at 350. MtnesterÂs notes: I used a 16-oz bag of frozen chopped spinach. Also, I mixed two 8-oz bags of shredded cheddar: one mild and one sharp. Hope it turns out fine. Spinach squares have another name, as well: Spinach Brownies :o) Honest! Shoulda told Alex they were brownies :o) Well, they are cut in squares like brownies. When PJR was younger, I would make creamed spinach and we called it GREEN STUFF! He loved it! Couple years ago, when I served it again, he said "grandmother, you can call it spinach now!"

I don't want spinach in my brownies....but I have made the chocolate cake with beets, not because it was a way to eat veggies but because it makes a good moist cake. I make squash muffins...or rather sweet potato muffins but they also work with butter nut squash, and put apple sauce in muffins and pancakes, I have put carrots in mashed potatoes and even carrots in cake and served "faux 'tatoes" which is cauliflower mashed with a little sour cream and salt and pepper. I think the amount of veggies in those recipes is way over rated...like the veggie puree mixed with the egg to coat chicken before breading...puh...leeze! How much of that stuff sticks to the chicken and how much would be in one piece of chicken. And 1/2 a cup of spinach in a pan of brownies? Really! that might abount to a tablespoon per brownie? There are many other ways of making veggies palatable without adding sugar etc to them. Sweet potato muffins are good as is zucchini bread and I love pink mashed potatoes ( with carrots) and when my kids were little I would put the egg and onion and peppers in the blender before adding to meat loaf. I've made Sherry's spinach brownies a couple of times and I really like them. Ashley doesn't and that's fine, more for me. Of course, she likes Subway and spaghetti sauce from a jar, so what can I say, LOL. I've only made them in a square pan, and I know some people who just detest spinach, so I don't serve these to those people. David won't even kiss Amanda if she eats one, because he says she TASTES like spinach. I have also used Chase's spanakopita recipe recently because I had phyllo dough left from that mushroom tart. I didn't make the little bite sized ones because they were too time consuming for the time I had. I liked the spanakopita too, baked in that square pan. It's a good thing we all have different tastes. I know I love the onion filling in my onion braid and make double. Sherry thinks it's too "slimy". I always double the lemon in Marilyn's lemon brownies, but I double the lemon in nearly everything lemon. I also made Marilyn's lemon cake roll for the Michigan Run and ended up throwing about half of it away, not because it wasn't good but because I just had too darned much food. I won't eat anything with olives in it and I believe you CAN have too much garlic. Oh, and I hate and detest the red sauce on pizza and I only eat spaghetti with red sauce about twice a year, when I can't weasel out of it. (shrug) It's what makes the world go round. So, anyone want to discuss grits, or sugar in cornbread, or cinnamon rolls vs. sticky buns or miracle whip vs. mayo or canned soup? Annie
