LOOKING for: Help with Spinach Recipe

I just found this recipe in an old cooking booklet and would like to make them for dinner one night next week, since my DH loves spinach and Id always have the ingredients on hand in winter. My question is: do you think theyÂd be OK if baked in a pan of hot water in the oven? What temperature? 325? Uncovered or covered? I think IÂd also add a little tarragon to them. What do you think?

SPINACH TIMBALES

2 (10 oz.) packages frozen chopped spinach

4 eggs

½ tsp. salt

¼ cup butter, softened

1 Tbs. fresh lemon juice

Cheese or hollandaise sauce, if desired

Cook spinach according to package directions; drain thoroughly. In small mixer bowl, beat eggs until foamy. Stir in cooked spinach and remaining ingredients except sauce. Divide mixture between 5 greased 6 oz. custard cups.

Place cups on a rack in a 10" skillet. Fill skillet with hot (not boiling) water to ½". Cover, cook over medium heat for 18 to 22 minutes or until knife inserted in center comes out clean. Loosen edges with knife; unmold. If desired, serve with sauce. Makes 5 (1/2 cup) servings.

Also, if you have any other ideas for using frozen chopped spinach, IÂd appreciate them. We have a local brand that is very good, without stems in it like some brands have.
