I find it easier sometimes to think of weight rather than number of pieces when I'm considering how much. You would probably want to figure about half a pound per person, then maybe add another pound "for the pot."

I agree, Kathleen, sometimes chicken pieces are huge and sometimes small, and is a wing equivalent to a thigh? Probably not. Weight is easier, and then you have the boneless/bone in equation too.

Some of the breast pieces are HUGE, I couldn't eat a whole one and half of one would be a real stretch for smaller children.

I don't think it's tacky at all to cut larger pieces in half, and if adults want another piece, they can always have another.

In my house there is always too much of everything, I'd rather have leftovers than to run out.

If you are talking breasts I'd do one breast per adult and 1/2 per child and it is absolutely OK to cut in half.

LOL, Sharon, if it's all breasts, that's one thing, but I was thinking mixed chicken parts and they can vary in size so darned much....

And it's all about how it's fixed....
For fried, eat in your fingers chicken...I say 4 people per chicken....doesn't matter if it's a 2 1/2 pound broiler or a 4 1/2 pound frier..
If you are figuring skinny chicken cutlets, 1/4 inch thick for picatta, I say 4 people per big chicken breast that you slice thin....about 1/3 pound each.
For a grilled half a boneless breast...half a pound is more like a serving....for chicken salad, I figure a little less than 1/3 pound of meat per serving. For a casserole containing sauce and veggies and pasta...I figure more like 2 to 3 oz per serving.
If you are planning on appetizers....smaller pieces are better for both adults and kids.
I would figure 2 oz per serving....and plan on adults having more servings than the kids will.

Well, LindaC, she said souvlaki, but she's not going to skewer it, so I'm thinking either breasts or boneless thighs, but I don't know that for sure.

I never cooked Souvlaki with out a Skewer.
Guess it would amount to 1/2 Chicken breast or a Thigh and leg, for the bigger eaters.
And a little less for the kids.

Yep, chicken breasts. They are the Kirkland pack so they aren't huge. I was worried that if they were cut in half it would look like I want them to take less. But if there is a huge plateful I'm sure it won't come across like that. My mom always had just enough food but not enough for seconds and that seems to have traumatized me as a child. Weird, I know. I just don't want to have as much as I usually do left over because it usually is a lot!

How many people? And will this be the "main course"? Or one of many appetizers?

There are 8 adults and 14 kids. Chicken will be the main course.

Cookie, you say they aren't huge? I'd go for at least 20, one for each adult and half a one for each child and that leaves a few extra in case people want seconds.

Besides, it would make yummy leftovers.

Thanks. I will pull two packs from the freezer - and of course clear out some of my fridge for the marinating. I am trying to make things that don't take up much space in the fridge as it gets pretty full this time of year.

Your fridge gets full "this time of year"? Mine always seems full, no matter the season. I gotta clean it out, I suppose it's time for a supper made of whatever is in there...
