Can you make wine vinegar?

Even a small bottle of plain, not fancy, red wine vinegar here is $4. Yet I can buy a BIG bottle of pretty tasty 2 buck chuck, for, well, a lot less. Plus I can imagine those store vinegars are made with the cheapest rotgut wine. We use a lot of vinegar, in recipes and on salads. Recently DH has been adding it to his waterglass at the table, having heard it is supposed to lower cholesterol. (I need to research that and see if it is true. IÂm skeptical.)

IÂd like to experiment with making some infused vinegars as well. Garlic, rosemary, etc. I think this would make a great Christmas gift. Or for our 2 family January birthdays.

In theory just leaving the bottle open should workÂbut shouldnÂt the process be controlled to make sure itÂs not spoiling instead? Does it work to add vinegar as a starter? What about sulfites? Do these prevent spoilage? Thanks!
