I don't know what Ann's recipe is....but in figuring out how many people recipes like that will serve...I go by the number of eggs...figure 1 1/2 to 2 eggs per person....and go from there.

Point of reference - I use Joy of Baking recipe which has 2 eggs, 1/2 cup milk, 1/2 cup flour, 1/4 cup sugar, 4T butter. Made in a 10" skillet, they say this makes 2-4 servings, but I really can't see counting on it for more than two unless there's more to the meal. And if you've got big eaters, even two is pushing it IMO.

My family has a "new" tradition for Christmas morning for the past 5 years or so, Panakoekens. It took a while to find a recipe we liked. We found it on-line. They made this using a 9x12 glass, but we cook ours in a 10" cast iron pan and it makes 3.

Panakoeken.
3 Tablespoons butter
6 eggs
1-1/2 cups flour (said you can use whole wheat, we don't)
1-1/2 milk
1 tsp vanilla
3/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 450. Melt butter in skillet in oven (important to heat whatever you are cooking in in oven, it needs to be hot) Pour batter in heated skillet. Bake 1 at 450 then turn down to 350 bake another 10-12 minutes. Should be puffed up and crisp golden brown.
We serve it with lemon wedges and powdered sugar or thawed frozen berries of some kind.
I have never tried it in the 9x12 but it should probably work.

Another favorite found on-line. Takes less time and you could probably do 2 at the same time. I like these better but my husband likes the Pannekoeken better.

German Apple Pancakes 6 jumbo/12 regular.
I think this was a Martha Stewart recipe found online. It had apples, which I don't use but will include. I serve it the same way as the above.
3/4 cup milk
2 tablespoon melted butter unsalted(if using salted just omit the added 1/2 tsp salt)
5 Tablespoons sugar
2/3 cup of flour
1/2 tsp salt
3 large eggs
few drops of vanilla
- Place all ingredients in bowl. (be care of heated butter,I drizzle in during mixing) Use food processor or mixer on medium high for 3 minutes. Lightly oil muffin pan and pour batter in. Place in 450 F oven and reduce to 400 immediately. Bake 15 minutes until puffed up and very lightly browned.
--Apple mixture;
2 large or 3 small granny smith or tart
1/4 cup light brown sugar
1 Tablespoon lemon juice
1/2 tsp cinnamon
2 Tablespoon sugar.
Wedge and slice apples. Toss with Br. sug. ,lemon, Cinnamon. Melt butter in skillet med heat and saute until carmelized (10-12 minutes cook throughly) Cool 5 minutes, lace apples in muffin tins that are buttered and coated with sugar, pour batter over apples.

Pancakes - German Apple Pancake

Topping

2 tablespoons butter
1/3 to 1/2 cup sugar
2 to 4 Apples (Depending on Size)peeled and sliced
cinnamom
vanilla

Pancake

3 eggs
3/4 cups of milk
1/2 cup all purpose flour
2 teaspoons of white sugar
2 teaspoons melted butter
pinch of salt

Butter for Pan
Powdered sugar
maple syrup
. Heat Oven to 400�F

Melt butter in skillet and add sugar, and apples. Cook until the
apples are tender. Add cinnamon and vanilla. Keep warm while pancake
bakes

Pancake

Heat a large skillet in the oven.

Mix all of the ingredients for the pancake in a blender.

When pan is hot add some butter and swirl it around to coat the pan.
Pour in the batter and bake for 10 to 15 minutes or until puffy. Slide
out on to a platter and top with cooked apples. Top with a little
powdered sugar and serve Maple syrup on the side.

I would say AnnT's recipe is for two servings and Woodie's would more likely serve 4-5... not 6-8 as indicated.

That's kind of what i was thinking, too, Teresa. Ann's is almost identical to Woodie's if you halved it except for the apples on the bottom and Ann's apples served on top.

Maybe I'll make it both ways and see which I like best.

I made the Apple Puffed Pancake posted by canucanoe yesterday.It was pretty good. It didn't puff up quite as much as my recipes however. I did do a 1/2 recipe in a smaller glass round casserole type dish and it worked well. It was handy to cook apples in dish in oven with butter instead of cooking in a pan on stove top, but maybe add some cinnamon and brown sugar to that step if I try this recipe again.
