What can I bake without butter?

Okay, I am the one person on the east coast who did not go to the grocery store before the storm hit. I have no butter in the fridge. Of course there is nothing like a snowstorm to make you want to bake. I have most of the other basics on hand. What can I bake without butter? All I have is one tub of Smart Balance which I want to save for toast, etc.

Any ideas?

Well, you can bake bread, I have lots of recipes that take no butter, oil or other fat. You could make tortillas too, either corn or flour and I've successfully made muffins with just bananas or apple sauce and eggs without any other oil or fat. My crepe recipes takes only one tablespoon of butter, if you wanted to splurge!

Angel food cake. Macaroons. Some types of biscotti; the really hard ones, that have to be dunked, have no butter.

Or make these:

Feine Schnitten (Diamond Cookies)

6 eggs
500 grams of sugar (my stepmother used dark brown sugar and so do I)
500 grams of nuts, ground (at least some must be almonds; I use almonds and hazelnuts)
260 grams flour
1 1/2 tsp cinnamon
1/4 tsp cloves

Beat the eggs and sugar for 30 minutes by hand. [Yes, that's what it says. Gives you some idea of how long to beat it in your mixer.]
Stir in ground nuts, flour, and spices.
Spread in a 12 x 18 baking tin.
Bake about 30 minutes at 325Â°.

Glaze before cutting. Mix powdered sugar with a few drops of lemon juice, then add water to get the desired consistency. [Thanks to Sol for suggesting this glaze rather than the crackly one in the original recipe.] Brush on while cake is hot. Cut into diamonds.

Compost? Chicken feed? So sorry. I know it's painful to put all that work into something to end up this way. I second the oven suggestion. I do tomato sauce, fruit butter in my big roasting pan and no sticking, no burning. I also like that fact that I can do something else!! I often just freeze my produce and make "oven things" when the weather cools and I can enjoy the heat and aroma at the same time. Deanna

I keep it simple, and use just one sort of butter for almost everything. Unsalted American butter. Land O Lakes, usually, because someone showed me, 30 years ago, that if you take two Land O Lakes packages, cut the maiden's knees from one package, and glue that piece onto the chest of the maiden on the other package, her knees look just like breasts. It was a silly little gag that got me thinking about subliminal advertising and still makes me giggle today. So I guess the advertising worked. Sometimes I buy a European butter, for spreading. But practically all of my butter use is for cooking. I don't eat buttered toast or croissants but once in a blue moon.

I just bake the potatoes, remove most of the potato but leave enough to support the skin "boats." I mash the potatoes with milk, butter, salt and pepper. To that I might add sour cream and shredded cheddar. Then I shovel the potatoes into the boats, top it with a pat of butter (and more cheese or not) and stick it into the oven to warm through. You can add anything that appeals to you for mashed potatoes. I like chives, but DH doesn't. Sometimes I do not add cheese and just top it with cheese. You could use chicken broth instead of milk. It all depends on what you like.

I did read that chicken cooked in milk/cream makes the chicken tender and tasty expecially boneless breasts that can lack flavor. Martha since I'm not a kitchen diva does the cream sauce taste chicken-y..like a chicken cream based gravy? Thank you.

If I was stuck home on a snow day I'd bake bread. And as Annie mentioned lots of muffin recipes call for oil rather than butter.

Biscotti Di Prato for one thing, and I make a ginger cookie that uses veggie oil and I have (somewhere!) a recipe for a chinese almond cookie that uses lard...but Crisco will work....and during WWII we made lots of cookies using crisco...because you couldn't even get enough butter to use on your toast. We bought it a quarter of a pound at a time.
Google recipes crisco, cookies....if you have crisco in the house...! LOL! Chocolate cookies hide the lack of butter well as do ginger cookies.

3 3/4 C all purpose flour (stirred till fluffy before measuring)
2 C sugar
1 tsp double acting baking powder
1/4 tsp salt
4 eggs
2 egg yolks
1 tsp vanilla ( or 1/2 tsp vanilla and 1/2 tsp almond extract if using
almonds)
1 2/3 c almonds or hazle nuts coarsley chopped and litely toasted.

Mix flour, sugar, salt and baking powder.
whisk together eggs, yolks and extracts, add eggs, etc to flour mixture and
stir until a dough forms (looks like it can never happen... but keep
working it...it will. I sometimes add a VERY little sprinkling of water)
add nuts, turn out on a non-stick surface ( I use a marble board or my
formica rolling board) and knead 3 or 4 times. Divide into fourths and
shape each piece into a 11 x 2 in. log ( make it "tall" as they flatten
while baking) Place on buttered and floured baking sheets, brush with egg
wash (egg yolk whisked with 1 T water). Bake at 350 for 35 min and cool 20
min. Slice 1/2 to 3/4 inch thick. Place on clean baking sheets ( cut side
down) and bake 10 or 12 minutes at 275. turn pieces over and bake another
10 minutes. If you want to make them extra fancy, dip half a slice in
melted chocolate and sprinkle with finly chopped nuts. You can make bigger
'scottis by making two thicker logs, but be sure to leave room for spread.

Best dipped in tea or coffee....or best yet in a sweet dessert wine!

Quick bread! Makes great gifts. Depending on what else you have, there's applesauce or apple quick bread, pumpkin loaf, cranberry quick bread, bannana, orange or lemon loaf, date nut, or chocolate with dried cherries . . . the possibilities are large.

I love these ideas. I've never made biscotti and will give them a try soon. The Diamond Cookies are tempting, too.

I decided to scratch my snow-induced cooking itch by baking a lasagna. I didn't have lasagna noodles. All I had was a bunch of half empty boxes of various kinds of pasta. So, I used rigatoni, elbows, and rotelle. I had some for lunch and it was pretty good considering I used a jar of Ragu for the sauce.

Maybe tomorrow will be butterless baking day.

It is snowing to beat the band out there. I am off to wrap presents now.
