Favorite twice baked potato recipe? Without cheese.

We are thinking of trying something we have not had before with our Christmas standing rib roast.

I thought these would be good. The recipes I looked up online all had shredded cheddar. I am not a fan of cheddar in potatoes, and I think maybe strong to go with the beef? Though cream cheese or a touch of mild blue cheese could be nice (or maybe pass a few crumbles for those who like it).

If you have a favorite recipe, I'd love to see it! Thanks.

Why i do a big roasted root veggie platter that pleases everyone. (yawn i post this so much)

And will also do another dish or two for variety like your stuffed potato idea but we are not that fond of twice baked cheesey. I also posted a more formal sweet potato dish that could be a combination of white and sweet potato...

All I've ever done for years is just scoop out the potato, mash it with some butter and a bit of barbecue sauce, then put it back in the shell, a little fresh pepper on top, and back into the oven to finish.

The potato bar worked out very well. I left shopping and prepping of the potatoes and other vegetables mainly to my son and husband so we had about twice as much as we needed for dinner. But that's okay - the leftovers will be used and some is disappearing in the snacking as they play. I started from an apple cider cheddar cheese fondue recipe for the cheese sauce (link below) but made some modifications. I got a hard dry cider for this partly because in my experience with grueyer fondue, the cheese melts better in an acid liquid. I also diced the cheese and tossed it with the flour because that helps keep the cheese from clumping. I added smoked paprika instead of chili powder. Cilantro butter was pretty easy to put together and added a nice touch to the flavor: Cilantro butter 3/4 cups firmly packed cilantro leaves 1 stick (1/4 cup) butter Pinch of salt Pinch of pepper Process in food processor until fully creamed. We had shredded parmesean and cheddar cheeses. Mild and hot salsa (the fresh stuff from the refrigerator section at the market Steamed broccoli and carrots, Diced green pepper and green onions Chana Masala (cilantro butter was really nice with this too) Yogurt and sour cream (separately - not mixed together Taco flavor smart ground Tortilla chips for grazing through the evening with the toppings or in case a potato hater wanted to have nachos instead. We used this recipe of Ann's a couple of nights ago and it was delicious. I think it could be made ahead, except for the baking part. We used several kinds of cheeses in ours (cleaned out the fridge!), so it was very cheesey. We liked it better than twice baked. You could probably even add some crumbled bacon to it if you want and that would make it very similar to twice baked. OMG, this recipe was good -- I ate way too much of this and can't wait to cook it again. Home Cookin Chapter: Recipes From Thibeault's Table Potato Gratin ============= I don't usually follow a recipe when making a Potato Gratin. Use the following as a guideline and adjust everything to your own taste. For a rich dish, use butter and whipping cream. 3 to 5 Russett Potatoes (or more depending on number of servings required) 1 garlic clove 1 teaspoon fresh thyme (optional) Butter cream or milk Parmesan cheese GruyÃ¨re cheese as well as cheddars and blue cheeses can be added for a different taste all together. Salt and pepper . Rub cut garlic clove over the surface of a gratin or casserole dish. Butter. Slice potatoes and place in pot and add enough cream/milk to almost cover. Add the garlic clove, thyme, salt and pepper. Bring to a boil and simmer for a few minutes, stirring often so the potatoes do not stick. When the potatoes have released some of their starch and thickened the liquid,remove the garlic clove, add 1 to 2 tablespoons butter and some grated Parmesan cheese. Pour into prepared casserole dish, dot with butter and sprinkle with some more Parmesan cheese. Bake in a 375Â°F oven for 45 to 55 minutes or until potatoes are tender. Remove from oven and let sit for 10 minutes before serving. In all due respect, MsMito, I don't find that answer snippy. Unless her tone of voice was off? But it's likely she doesn't have an exact recipe, and just cobbles those ingredients together until it looks right. I mean, it does sound kind of simple. The only real question in my mind, without having seen the dish, is the proportion of ham to potato. The words "can" and "pkg" are a bit nebulous. And I think I'd use pepper jack to kick it up a little. But, really, you shouldn't have much trouble replicating it.

I love twice baked potatoes, so I'll be saving this entire thread! LOL Her's a favorite of ours. We often have them as a meal, served with just a salad or side of vegetables. Andouille and White Cheddar Over-Stuffed Baked Potatoes Recipe courtesy Emeril Lagasse, 2000 8 large baking potatoes, like Russets Drizzle olive oil Salt Freshly ground black pepper 3 tablespoons olive oil 2 cups thinly sliced onions 1/2 pound andouille sausage, ground 8 tablespoons butter 1 to 1 1/2 cups cream fraiche 1/2 pound white cheddar, grated 1/4 cup chopped chives 1/4 cup chopped parsley Preheat the oven to 400 degrees F. Season the potatoes with olive oil, salt and pepper. Place on a baking sheet and bake until tender, about 1 hour. Remove from the oven and cool. In a saute pan, over medium heat, add 2 tablespoons of olive oil. When the oil is hot, add the onions. Season with salt and pepper. Cook until caramelized, about 8 minutes. Remove from the heat and cool. Meanwhile, in a saute pan, over medium heat, add the 1 tablespoon of oil. When the oil is hot, brown the sausage, about 6 minutes. Using a slotted spoon, remove the sausage and drain on paper towels. Set aside. Using a sharp knife, remove the top 1/4 of each potato. Using a spoon, remove the flesh from each potato, leaving about 1/4-inch border on each potato. Set the hollowed potato shells, aside. In a mixing bowl, combine the potato flesh, butter, and cream fraiche. Season with salt and pepper. Using a hand masher, mash until smooth. I like to mix in butter and sour cream. Cheddar cheese as optional topping. Usually some paprika on top.

Someone here recently mentioned having baked sweet potato fries with smoked paprika. I tried it last night and LOVED it! I'd be tempted to also try some twice-baked sweet potatoes with smoked paprika. :)

One of our favorites are smashed potatoes. I microwave the taters til soft-ish, then score them and smash them with a can/rolling pin or whatever seems handy, so the tater opens up. I then drizzle with garlic butter or just spray with OO spray to be fixed up later with cheese, chives or whatever people like. About 1/2 hour or so usually browns them nicely, but you can always put them under the broiler for a few minutes to get a nice brown!

No recipe per se ......but we like sour cream, chopped green onions, butter , salt and pepper and a sprinkle of paprika on top.

If it is only cheddar that you are averse to, I have made mashed potatoes with chèvre, bacon, and green onions. I may have even thrown in a chunk of cream cheese and some butter. Sorry, but I don't have a recipe. I just kept adding things to the potatoes and tasting until I got a pleasing flavor.

Just had to post something here since twice baked potatoes WITHOUT cheese just seems wrong! Personally wouldn't consider any kind of blue "mild"... but love it. What if you used cream cheese... kinda cheese and butter in one fell swoop? You said they're going with beef? Even though "everything's better" with it, would probaby not add bacon... though definitely would NOT be a fail.

For a change, I mix sour cream (light, it has more tang) and some horseradish. Mix into the potato. No cheese needed, but it's always a nice addition. :-)

I guess when I think about it, the cheese I don't like in potatoes is any yellow cheese like cheddar. I do, however, LOVE blue cheese, and so do we all. I like blue cheese on steaks, so having it with the potatoes that will accompany beef should go very well. I was thinking about bacon, but I think that is overkill. So we'll mix some blue cheese with sour cream or cream cheese. Thanks!

Sorry, I have a great recipe that all of us love and freezes well, BUT it does have cheddar cheese.If anyone wants just ask. Now, blue cheese, my husband would kill me if I tried to serve him that.

Not all cheddars are yellow, some are white. So there would be no issue with color if you used a white cheddar.

I just bake the potatoes, remove most of the potato but leave enough to support the skin "boats." I mash the potatoes with milk, butter, salt and pepper. To that I might add sour cream and shredded cheddar. Then I shovel the potatoes into the boats, top it with a pat of butter (and more cheese or not) and stick it into the oven to warm through. You can add anything that appeals to you for mashed potatoes. I like chives, but DH doesn't. Sometimes I do not add cheese and just top it with cheese. You could use chicken broth instead of milk. It all depends on what you like.
