What's for Dinner, Wed. nite?

I'm not sure if I can come back to comment on everyone's yummy (I'm sure!) dinners, but I like this thread.

We used up the rest of the roast beef in hot beef sandwiches with peas on top, and lots of gravy. Gotta have the peas! And some coleslaw to go with it. So good!

I never heard of putting peas on a roast beef sandwich, but I'd try it and feel I'd like it. (Is there gravy involved?)

I made over a gallon of homemade spaghetti sauce today. Will freeze most of it in 1/2 to 1 cup portions that will be used over pastas, rice, hotdogs, etc. I had it over whole wheat spaghetti tonight.

Just finished dinner... Chicken, asparagus, brussles sprouts. DH had some yummy creamy cheese crusted scalloped potatoes. Boy, has the spelling bug got me tonight. Must have been that bite of potatoes....

My roast was a chuck cut. The only cut for Pot Roast in my opinion. Big chunks of onion and carrot to add flavor were browned in the pan first and then removed and browned the roast sprinkled with salt and pepper. Then put everything back in the pot with beef broth, sprigs of rosemary and thyme, whole garlic cloves, and cooked long and slow on the crockpot burner of my stove. The broth is strained at the end, but we did eat the nice big chunks of carrots. It was very good. And I love my new Dutch oven!

Hi Terri! I'll post my dinner here, so that my thread drops down. We set a record temperature for cold last nite -30C. It warmed up to be a beautiful, sunny winter day. -11C. Hubby had the urge for hotdogs, so he had 2 of those and I had a sausage on a bun, loaded with mustard, onions and sauerkraut. Bought some potato salad and coleslaw to go with them. I made a cherry cheesecake last nite and we had that for dessert. It's the uncooked, refrigerated kind with whipped cream. Delish!

Ah well, our houseguests are arriving this afternoon so we can't do a pre-Thanksgiving fast after all. We're going to have braised chicken. Picked up a pack of 12 thighs and deboned them. Roasted the bones, cracked each one, and those bones are now in the pressure cooker with some previously-made stock, red wine, onions, carrots and whatnot. They'll cook for an hour, then we'll strain to get a wine-y double-stock. The deboned thighs are brining away. When I get home from the airport, we'll braise the meat in the stock while I figure out a side dish. Something of carrots. Due to a shopping list miscommunication, we have 7 pounds of carrots in the refrigerator. Just a bit more than we actually planned. Let's see. According to my iPhone calorie counter app, I have 600 calories left that I can eat today. Got to stop nibbling if I want dinner.

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

I'm on vacation! Tonight broiled grouper tacos, pineapple coleslaw, onion rings (shared with DH) and key lime pie.

Our favorite Mexican place. I ordereed chicken enchiladas and chile rellano. I *ate* chips and salsa! I am stuffed! And barely touched my dinner. Those chips are like crack!

Mixed pork and beef together with a few things, made a meatloaf and then dozen and a half of meatballs..the meatballs are simmering "swedish" style.

Meatloaf is baking, taters and garlic boiling.

I already at a few meatballs..yummmy..

Ribs! I put a spicy rub on them this morning and made some good sauce for basting. I made some broccoli slaw and sweet potato fries to go with them. Sure was tasty.

Robert took today off and the rest of the week. We went out early to do some mattress shopping (YIKES), a doctor's appointment (for him), and had lunch at Cheddars, which is great here in Huntsville. I had a nice salad and Robert had fried catfish.

Where are you, ellendi? Sounds like a tropical menu! Yum.
