Oh, boy, I had to dig deep in files in the basement for this one (LOL)... This information comes from a large number of articles in my file. I'd also suggest you do your own research on the subject so you gain a better understanding for yourself. Malt can be non-diastatic and diastatic. It's one of those things that is so ridiculously cheap to make from sprouted grain, you can make a lifetime supply with a 1-cup of grain (but I suggest to start with no more than 1/2-cup). - Non-diastatic malt is primarily used to add flavor, sweetness and color to the crust, but it will also add to the food supply for yeast. - Diastatic malt will do the same as non-diastatic malt, and in addition, supplies amylase enzymes. The amylase enzymes convert starches to maltose sugars and will also increase the softness in the dough. - "Mills typically put in 1/10% malted barley flour (barley because barley malt is cheaper than wheat malt) to provide diastase (enzyme), which converts the starch in damaged starch granules to sugars that are utilizable by the yeast over an extended ferment. The use of more diastatic malt than this can result in slack, sticky dough, and will not improve yeast action." - Diastatic malt powder is powdered malted grain, usually barley, but wheat and rice may also be malted. Diastatic refers to the diastatic enzymes that are created as the grain sprouts. It does all of sugar's jobs and has none of the shortcomings, so when malt is added to dough, it essentially gets a nutritional boost, not like the empty, non-nutritive sugar calories. - Malt extract is used the same as diastatic malt powder. - Malt syrup is a sweetener. Replace a tablespoon of sugar or sweetener in a bread recipe with 1/2 t. of diastatic malt powder, OR, 2 T. of malt extract. Add malt extract to the warm water if proofing bakers' yeast. "Adding barley malt, malt syrup, or malted flour ALL help break down big molecules of starch into simple sugars that yeast can use. For maximum sweeteness add a tablespoon of baking malt syrup (source: CookWise)." - How to make your own diastatic malt powder: Sprout 1/2-cup of wheat berries by covering them (plus 1") with water in a jar for 12-hours (or so - overnight). Drain. Rinse with clean water and drain again. Add a an open cover to your jar (I use a mesh sprouting lid). Leave the jar in a dark place for 2-3 days (or until the sprout is as long as the wheat berry). Be sure to rinse the grain once or twice each day. To dry the wheat, place on a sheet in a dehydrator and dry at 100-degrees F., until completely dry. Do NOT dry at a temperature above 130-degrees or you will kill the enzymes. When completely dry, grind the dried sprouted grain into flour and use approximately 1 t. per loaf. It should add a nice "wheaty" note. (A very old) Whisper Mill - which is an electric impact mill (now known as a Wonder Mill) - this mills most grains/seeds/beans into a very fine flour - fine flour = fine bread, coarse flour = coarse bread. 2. Marga Mulino Flaker Mill - for cracked grain, flakes, and coarse farina (for cooked cereal) 3. Corona Corn Mill - for coarsely milled grain and corn meal. 4. Porkert Seed Grinder - for small seeds, such as amaranth, poppy seeds, teff, etc. 5. Bosch Coffee/Spice - for milling flaxmeal. 6. Family Grain Mill - a hand mill, that also has an electric-powered motor to run it as well, that has a lot of attachments available for other uses (meat grinders, flakers, etc.). This is my back-up mill. You have to mill the flour twice to get a reasonably fine grind of flour. Source for recipes: I suggest you start by substituting unbleached/bleached flour in your favorite recipes with a portion of wholegrain flour. There are all kinds of books out there on whole wheat baking. I have a collection of 28 beans, seeds, and grains that I use milled and whole - included in that, several types of wheat. I develop many of my own recipes because I use really "odd" ingredients, including gluten-free baking. Whole Wheat Pastry Flour is milled from (low-gluten) soft red wheat, just like you thought. It's best used just as you described - in baked goods where you don't want a lot of gluten development - for the most part, anything other than yeast breads. Low-gluten bleached flour would include White Lily and Martha White - which are great for quick breads, pastry, etc. I purchase soft white wheat berries from Bob's Red Mill to mill into whole wheat pastry flour. I also use freshly-milled spelt and some rye, barley, and triticale for baked goods that need low-gluten flour, as an alternative to soft wheat flour. All wheat has a protein level that determins if the grain is hard or soft. Even in the same field you'll find protein (gluten) level differences from one side of the field to the other. If a portion of the field is shaded(usually at the edge of the field) and/or there's a low place in the field that retains water after a rain, the wheat that receives a lot of water/shade will usually have a low-protein count. Even though hard wheat may have been planted, the protein level is also determined by the amount of rainfall, and other factors. Soft wheats are characteristicly plump (a lot of endosperm), while hard wheat varieties (especially winter wheat) is small, wrinkled, and very hard when you bite it. When soft whole wheat is milled, the flour is exactly that - very soft to the touch. Hard whole wheat is much 'grittier' - due to the higher percentage of bran to endosperm ratio. All bleached/unbleached flour is milled from a combination of wheat protein levels to formulate the amount of protein for the type of flour needed. High-protein wheat is used for yeast breads, a combination of hard and soft wheat is milled for all-purpose flour, and pastry flour is milled from soft wheat. There are also fields of extremely high protein wheats (15% or more), but they are mixed with lower protein wheat to make flour. I've used some wheat that was 16% protein, and it took forever (lots of kneading and a very long fermentation) to develop the gluten in bread - 12-13% protein level is much better for yeast bread. Too much gluten will make a tough loaf of bread. The highest protein level wheat is durum wheat. Unlike hard red and white wheat varieties which are used for yeast breads, durum wheat is used in pasta. I mill durum for whole wheat pasta - NOT red or white varieties of wheat. Commercial whole wheat pasta is made with wholegrain durum wheat. The elements in wheat protein that we call "gluten" are actually a gluten group - GLUTENINS and GLIADINS. Glutenins provide the elasticity quality that allows bread dough to expand. Gliadins contribute to the viscosity and extensibility of bread dough. Red and white wheat varieties have a dominance of GLUTENINS and less GLIADINS. Durum wheat has a dominance of GLIADINS and less GLUTENINS. Therefore, even though durum wheat has a high protein level, it's unsuited for bread making, due to the type of protein. -Grainlady

White whole-wheat (also called whole wheat pastry flour) will yield a softer bread and still have the fiber. The vital wheat gluten is a must. Here is David's (Lakeguy) recipe which I have saved but have yet to make (still no oven, but soon!). It looks great. Struan Bread Makes 1 large loaf or 2 small loaves Soaker 3 tablespoons polenta 3 tablespoons rolled oats 2 tablespoons wheat bran 1/4 cup water Dough 3 cups unbleached bread flour 3 tablespoons brown sugar 1 1/2 teaspoons salt 1 tablespoon instant yeast 3 tablespoons cooked brown rice 1 1/2 tablespoons honey 1/2 cup buttermilk 3/4 cup water topping 1 tablespoon poppy seeds Mix together the ingredients for the soaker. Cover and allow to soak for at least half an hour or as long as overnight. In a larger bowl, combine the dry ingredients, then stir in wet ingredients and soaker. Add more flour or water until the dough can be formed into a ball that is tacky but not sticky. Place the ball of dough on a clean work surface and knead it for 10 to 12 minutes, then return it to the bowl. Cover the bowl with plastic wrap and allow the dough to ferment until doubled in size, approximately 90 minutes. Remove the dough from the bowl, degas it gently, and split it for two loaves or shape it as is for one. Place the loaves in greased bread pans, spritz or sprinkle water on top, and sprinkle a handful of poppy seeds on top. Cover the pans loosely with plastic and allow the loaves to rise until doubled in size again, approximately 90 minutes. Bake these loaves at 350 for 40 to 60 minutes, until the internal temperature is around 190 degrees. When ready the loaves will be quite brown on top and will make a hollow thud when tapped on the bottom. Nothing like homemade bread...I love it! David

1. What you are probably experiencing are rancid oils in the whole wheat flour from exposure to oxygen and heat, combined with an odor from over-proofing. Wheat as a grass and wheat as the hard seed, have nothing in common for flavor. Trust me on this one - I grew up in the middle of wheat fields and participated in wheat production from seed to harvest. I grow wheatgrass for juicing and 25-years of milling my own flour and making all our breads and baked goods with it, and I've never experienced any flavors or aromas like you describe. Try another loaf using a dough rising bucket to control your first rise and see if you get different results. Dough can over-proof during the first (second, optional rise, although it's not often used anymore) and the final proof/rise (after it's formed for baking). 2. Purchased commercial flour isn't "fresh". It may have been recently purchased, but the only way to get "fresh" flour is to mill it yourself, or purchase it at the mill as soon as it's been processed and bagged. We have no idea when commercial flour was milled, conditions during transporting and warehousing (temperature/humidity) and how long it's been sitting on the shelf in the store. Depending on how it's bagged and stored, flour can also absorb strong household, refrigerator or freezer odors. --If you are considering adding bulghur, that's another wheat product I would suggest making yourself from whole wheat berries - fresh is best. It's susceptible to quickly going rancid from exposure to heat, light and oxygen; and it's mainly adding "tooth" (a grainy, chewy texture, as well as additional fiber), but not a lot of flavor. I do have a good recipe for Bulgur Wheat Loaf if you want me to post it. You can't mask rancid oils or that vinegar scent from over-proofing dough. As a foods judge at fairs, smelling the bread is an important part of judging, and can tell you a lot about it. 3. "Artisan Bread" means it's made by hand. After that, it's up for interpretation, and that interpretation gets very broad. What you are describing is a lean, light wheat bread, free-formed into a boule (ball). The term "artisan" is more commercial than anything else. Up until bread was made with some kind of machinery, it was all "artisan" bread - made by hand. Some claim an "artisan bread" has to be made with a starter, not baker's yeast. Another interpretation may mean it's formed by hand, but the dough can be made with the assistance of a machine (stand mixer or bread machine). Panned soft sandwich bread can be an "artisan" bread. It doesn't have to be formed into a boule. 4. Poking dough with two fingers after the first rise in the bowl is an inaccurate method for testing dough for reaching "double" - use a dough rising bucket instead. For the final proofing (after the dough is formed) to show the loaf is ready to bake, testing it by gently pressing it with a finger and leaving a slight indention on the surface is not much better for accuracy. You really need to be able to eyeball the dough, and make sure you are using the correct size pan for the correct amount of dough, and know the dough's rising characteristics. For instance, using a no knead - Bread in 5-minutes a Day recipe, those loaves generally don't "double" in bulk before they are ready for the oven. You'll also get a big difference if you form a flat-ish boule instead of a high dome. They also take different baking times, so bake bread to the correct internal temperature, not by time, looks, or the ever inaccurate - tapping on the bottom. --Cover formed dough for the final proof with plastic wrap - it's not possible to put it in a dough rising bucket. The dough rising bucket is used for the first (and second - if using it) fermentation of the bulk dough, not formed for baking dough. --Where many people go wrong -- they allow the dough to rise to the size they want the finished loaf. In an approximate, rule-of-thumb measurement, the dough represents 1/3 of the finished size, you allow the dough to double in bulk and that = 2/3 of the finished size. The last 1/3 is accomplished through oven-spring when the dough finishes rising in the oven. 5. Since bleached/unbleached flour is no longer bromated (added chemicals), it doesn't have the extensibility it once did and it doesn't stretch as far before over-proofing as it once did, so just UNDER double is actually a better gauge, and just UNDER double is nearly always a better gauge when using 100% wholegrain flour, or a mixture of wholegrain and bleached/unbleached. Whole wheat flour isn't as extensible as bleached/unbleached flour because of the bran. 6. A dough rising bucket is nothing more than an opaque plastic tub with straight sides and a tight fitting lid. They are available through King Arthur Flour, but I got mine from the local restaurant supply store for about half the price, where they are considered - food storage containers with a lid. I like those with graduated markings on the side, but a recycled plastic ice cream tub will work just fine. --Just make sure the container you use has straight sides. A slant-sided bowl is also an inaccurate gauge because it's smaller at the bottom and flairs out at the top, so it's very difficult to gauge "double". --I have these plastic food storage containers in several sizes to accommodate different amounts of dough, and also have round as well as square containers. It's all about the straight sides. The one I use the most is 2-quarts. My standard recipe for 100% whole wheat bread makes about 1-quart of dough. I know it's double when it reaches the 2-quart line. --If you use an unmarked container, just use a ruler to measure where the dough is in the container. You could also tape a 6-inch ruler on the side of the container. Double the measurement of dough pressed in the bottom of the container and mark it on the container. So if the dough measures 2-inches, it will be "doubled" when it reaches the 4-inch mark. If you mark it with a piece of masking tape, mark whether the top or the bottom of the tape is the measure, or you can accidently be adding the width of the tape and over- or under-proof the dough. Beth Hensperger's "Bread Made Easy" - A Baker's First Bread Book - shows step-by-step pictures and includes pictures proofing dough in a dough rising bucket (pg. 32), with the two-finger test as the option.
