Peter Reinhart Whole Wheat Bread (pics)

So I was finally able to make the bread today. This is the first recipe in the book (Peter Reinhart's Whole Grain Breads)-100% whole wheat sandwich bread and I've got to Peter Reinhart his props. I'm very happy with the results, especially since I've never had any luck making 100% whole wheat bread before. Here's the entire process if you are interested:

This is called the soaker and it consists of ww flour (I used King Arthur White Wheat which I always have on hand), salt, and buttermilk (or milk, yougurt, soy milk or rice milk). This needs to sit at room temp. for 12-24 hours.






This is the biga and it consists of ww flour, yeast, and filtered water. I made this on Friday and it sat in the fridge for 3 days. The minimum time this needs to be in the fridge is 8 hours.






Next, you chop up the biga and soaker into 12 pieces each. I'm a little puzzled as to why this is necessary but I'm sure if I'd completely read the 90 page introduction I'd know.






Finally, add the rest of the dough ingredients to the chopped up biga and soaker. Some more ww flour, salt, yeast, honey or sugar, and oil or butter.

After shaping and rising again. There are also instructions for hearth baking this as an artisan round creating steam in the oven which I don't have the patience for.






Fresh from the oven-my house smells great about now.






And time to eat.
