Wow, you have your turkey already out of the oven and drippings ready for the gravy at 8:00 AM? No reason why you can't make the gravy, let it simmer and then refrigerate it until dinner time. Then just reheat. There is no reason to leave it heating in a crock pot. Make sure you cover the gravy though so that a skin doesn't form on the surface. Ann

I would not add smoked juices to the gravy either. Not everyone likes too much of that flavor. I just assemble my stuffing and then bake it the next day. I even tried the make-ahead mashed potatoes this year. Less mess and dishes on turkey day. Just remember to take the dishes out and try to bring them to room temp a few hours before they go in the oven or add cooking time to the recipe. It might be cold in the middle if you use the original cooking time. I have time change notes on all of my make-ahead recipes.

I think this is good gravy, I do not use the giblets or the neck, because I buy the turkey parts separately to make this gravy. Thank you all. Sharon, this started with roasting "pieces and parts". I did actually end up with more fat than i thought i would. But it is kind of tasteless? That doesn't sound right. lol. It lacks taste. In prior years, I think it has had more of a wine flavor - which i liked. Oh well. It is done and there is much to be said for that. Thank you again.
