My mother had an old cooked pudding recipe using the large pearl tapioca but I have been unable to find the same type in the stores. I find a 'pearl' tapioca in Asian markets but it starts to dissolve .. doesn't hold it's 'pearl' shape after cooking like my mother's did. Her's always had a kind of soft,'chewy' consistancy when cooked. Also, when I do try the Asian variety I always seem to get the egg mixture to 'curdle' somewhat no matter how slowly I add the hot milk mixture to the beaten eggs or even visa versa. Does any one have an idea where I can purchase the 'real' pearl tapioca & an idea how to prevent the curdling? This was one of my favorite puddings that my mother made & I'd love to replicate it again if anyone has any suggestions!
And a rice pudding recipe using cinnamon sticks & raisins in it while baking?
