Gosh I've been busy, today.

Company coming which is rare.

I stopped by Full Moon around 1:30 and grabbed 3 ribs and no sauce.

What's on your dinner table this Saturday?

Feeling a bit puny, so I am just having some hot tea, may added some buttered crackers and that is it for me.

I made a meatloaf today. While it was in the oven, I put in a potato to bake. Also had some of the lima (butter) beans I cooked today.

Well, we did a mini "refresh" on our kitchen in 1999 to add a dishwasher and standard-sized range, as we had one of those apartment-sized ranges that DH detested. When we did the mini refresh, we also changed countertops, sink & faucet, and we had put in peel and stick vinyl over the hideous gold linoleum when we first moved in. That being said, we still had issues with layout, with the only really useable countertop being the 15" to left of the range and 5" to the right of it. There was a small swath of countertop across from the stove, next to the sink, but because it was right by the back door, it became a catchall. When I took anything out of the oven, it pretty much had to go on the stovetop. Baking cookies just wasn't very fun after a while. I sorta stopped doing it. :^( Then there was the wall between the kitchen and livingroom that made the kitchen seem so dark and cramped. The lack of storage was the biggest issue we had. I still get the heebs when I think of that cabinet where the plastic storage containers lived. I don't know how many times I sat on the floor and cleaned out that blasted cabinet, just to have it heave out plasticware all over me the next time I opened that door. I'm pretty sure that DH would open the door *just enough* to throw an item in there. We had no venting over the range, instead we had a cabinet directly over the range, and it was lower than standard. When we did the remodel, we could see big black burn marks underneath. Lovely. Our garbage was located across the kitchen on the stairwell landing. If I had gunk in my hands, I had the pleasure of carrying it across the floor, leaving a nice little dribble trail. Fun times! The giant fluorescent light box, with that hideous tube light. I tried to "tart it up" at one point, but in the end, it was just a big rectangle with an ugly light, so it had to go. My peel and stick vinyl tiles, so wonderful and bright when we installed them, were pitted and cracking in places. No matter how long I scrubbed on my hands and knees, there were areas where the tile was worn, and the dirt was embedded. Yuck. The kitchen wasn't awful; it just was not a joy to work in. Now I enjoy baking and cooking in there, and putting away the tupperware is not an exercise in frustration! Hooray! Oh, happy day! :^)

I had some left over salmon from the freshly caught stuff from my neignbor, a handful of Swiss chard from the garden just picked and some left over spaghetti pasta.....I sauteed the chard with onions and garlic, added the spaghetti and just heated the salmon to the perfect temperature. Then I squeezed some freshly picked lemon on top and loved every single bite.

Thanks, Glenda--sure appreciate it. We left home at 8 this a.m. and didn't get home until 6:30. It was a long day--mostly waiting. I did fine--the picc line is my new BFF. Now I don't have another appointment until I start radiation Aug. 1. I don't want to think about doctors, sickness or anything but everyday stuff for the next week. What a luxury it will be. Y'all ate really well--but, then, you always have great meals. Almost for got. Stopped at Wendy's. I had a junior cheeseburger and Harry got the new pretzel bun burger and liked it a lot--especially the bun. Thanks--sorry I forgot who mentioned it earlier--but thanks for the tip.

sleevendog… “no mustard seed” – LMAO! I wanted to add crème fraiche to my pizza but thought better of it ; ) Your pizza looks awesome! Bet it tasted even better than awesome. You somehow knew I was going to ask about your frittata, right? Thank you for including the cooking times, methods, and ingredients. I wanted to make a frittata the other night but was low on veg’s. I’d never have thought of potatoes on the bottom like a potato anna… You’ve inspired me… Now, are you positive that's not burned/charred, rather than browned? Ha, ha! neely, I’ve never tried that, but will have to as it looks good! I’ve made fruit and coffee ices in the freezer - not the same. ann_t, there was a huge Fed Ex truck outside late last night and I told DH “That’s Ann’s quail – she shipped some to us!” He looked at me like I had lost it. Wishful thinking… ; ) Your quail, salad, and potatoes would have made my year! Yum! ann_t, the website with pizza pan required an order of $100 minimum, so I had to purchase a cheapo version elsewhere. That pan was 20 gauge and would have been lovely... sigh. Cooking is hit and miss just now. Last night was leftovers, tonight I'm not sure. Promised DH fish tacos this week (maybe), and if I can find some good boneless chicken thighs I've got one more decadent meal for him before I begin packing the kitchen in earnest... oh, and I still have to make a 'ton' of ann_t's artisan bread to freeze for pizzas.

Had a turkey with lettuce sandwich and some grapes. While eating the grapes, the neighbor boy brought the dozen Krispy Kreme donuts I had ordered from him as a school fund raiser some time ago. Ugh. And I was doing so well avoiding sweets!
Well, SOMEbody has to eat them right? ha.

I've been really lazy today. I've had a dull headache most of the day and don't really feel like cooking. I think we will just have some pizza. Marilyn Sue's Hot tea and buttered crackers sounds good to me but I don't have and crackers. Might just have tea and pizza.

We kept busy. We were out at the grocery store at 6 am....they had some door-crasher specials (grapefruit 4/$1, cartons of oj for $1.39, bananas for .29 lb and Kraft peanut butter for $2.88 for 1 kg).

Hubby defrosted the freezer and organized it, and I washed the apartment halls and stairs. I also did 2 loads of wash and hung them out on the line, and some other piddly things.

I made a casserole for dinner that BeeOhio posted in the casserole thread.....buffalo chicken and potatoes. I'll definitely make it again and tweak it a bit more.

We went out to dinner tonight. I had a marvelous lobster pot pie. (We are away visiting family - nothing like this available at home.

We're having beef stew and a salad. I'm thinking of making a pitcher of iced tea since it has been so warm today. We've had the air conditioner going all afternoon. We bought a Brown Turkey Fig Tree and a Mandarin Orange tree this morning to replace two that died during our freezing weather. Bob is planting them now.

How I would love to have a fig tree and orange tree in my backyard. Weather is too cold here, though! Mamatoad - I know very little about these trees. Are they ornamental or do they produce edible fruit?

Was very busy most of today getting ready for tomorrow. So I had a frozen chicken strips dinner and assorted fresh veggies. It all tasted pretty good.
