Porcupines in a skillet. I love porcupines, mom used to make them for me when I was young. So this one sounded like a good one to try out.

Ingredients

1 lb. ground beef
1 pkg. dry onion soup mix
1 1/2 c. hot water
3/4 c. uncooked rice
1 (16 oz) can tomatoes
1 c. shredded cheese
1 small can mushrooms (optional)

Instructions

In a large skillet, crumble beef and brown.
Drain and stir in onion soup mix, water, tomatoes (optional mushrooms).
Add rice and stir.
Cover and cook on low heat for 25 minutes or until rice is tender.
Sprinkle with cheese, melt and serve.

Friday is my go to town for supplies day, and deliver the meals on wheels for our district. So, it is our treat day.

Chinese food, beef chop suey, pork chow mein, sweet and sour pork ribs, almond chicken and chicken fried rice.

Shirley, we love turkey and I never think to make it except for Thanksgiving. Go figure.

Raven, I haven't had porcupines in years.

We are having some landscaping done and had to go out and look at stone for a wall DH wants built so we went out around noon and after looking at stone, we went to lunch. There's a new Mexican place in town. DH isn't wild about Mexican food, thinks it's all mush, but this was pretty good. He even liked the refried beans which he never eats. He had some of his steak fajita left over and I gave him my leftover beans so that's what he's having for dinner if he gets hungry. I'm not hungry but should I feel like something, there's some delicious crusty bread waiting to be toasted with a nice hot cup of tea.

celebrated our 45th anniversary today...but instead of going to a biggie, we decided to try boston market...hadn't been in years...we bought the dinner for 3 with sliced turkey, the awesome creamed spinach , apples and a sliced potato...have enough for at least another dinner or big lunch....we've gotten so accustom on Friday nites eating dinner and heading upstairs early for the news and a movie...
Shirley? don't give up the other turkey....thaw and cut in half...cook both, in different pans so not as hard to struggle getting out of the oven....debone after and freeze...my mom used to cook in a Reynolds "bags", and it takes a LOT less time....she'd throw in a piece of celery and a packet of onion soup mix...it would last her quite a while(she was alone)

A huge Romano crusted chicken Caesar salad. Husband will still be hungry. He can finish off the chicken noodle soup I made last night.

Corned beef and cabbage tomorrow. I can't wait. Been thinking about it all week!

A wonderful salad bar salad, cottage cheese, crackers, the works ! And... a huge enormous giant icy cold Coke !

DH cooked grilled swordfish, quinoa and broccoli. Yum.

Raven: The first porcupines I ever had was a coworker made them for a covered dish we were having at work. I never made them myself till about a year ago. You're always coming up with such good recipes.

Monica: My sister got a gift card from Cracker Barrel for Christmas. If she gets to go sometime, I'll be happy to accompany her.

Rhizo: "What can I bring?"..... Flavor for the bird. lol

Prairie: I'm not a Chinese food person, but would like to try small bites of all you listed.

Georgysmom: I don't know why so many of us relegate turkey to Thanksgiving. I think I'd like steak fajitas. Right now, your toasted crispy bread and tea sounds good.

Angela: Even though your meal today sounds so good, tell me when the corned beef/cabbage will be ready tomorrow.

Deeby: I like a good salad bar, especially if they have good soups.

Hosta: I've not tried swordfish but I'll bet it's good and the side dishes do too. I like both.

Cleaning out the refrigerator/freezer before the new one is (knock wood) delivered tomorrow: Greens, a tomato, some black olives; Half a half boneless chicken breast is going into a Bertolli frozen pseudo-risotto thingie; last two LaBrea french rolls in freezer. DH will use the last OJ in a screwdriver before dinner.

One of the gardeners here has said he'll take the old fridge -- so much better than junking it. Still works great, but it's from 2001. If it fails after we go home and while we have a guest at the condo...it takes six to eight weeks to get a right-size replacement.

I've gotten to where I love buying a small turkey and roasting it in place of a chicken. They're often on sale cheaper than chicken and far meatier.

We were out playing and got home at 4 am. :-(

I made salmon patties, sauteed green beans and onions and rice for dinner last nite and I have a boneless pork roast in the slow cooker now.
