Hello, Grainlady

I appreciate your posts and usually learn something, so...

would you be willing to share the fruitcake recipe you mentioned elsewhere?

I have about two cups of mixed, candied fruit in the freezer. I actually like fruit cake, even if no one else does.

p.s. I do NOT do alcohol, so if there's any soaking involved, I'd appreciate alternates.

Also, should I rinse the candied fruit before using it?

After years of making all kinds, this is the one the fruit cake loving friends and family like best. Even hubby, who claims he never liked fruit cake, will eat this. No alcohol. Just have a jumbo-size bowl to mix it in.

Hubby helped make it one year and wondered what all the fuss was about - fruit cake wasn't laborious like he'd heard. I said we didn't need to grate the sugar from a cone of sugar; we didn't need to crack/shell the nuts; we didn't stone the dates; we didn't pick the seeds out of the raisins; make the candied fruit well ahead of when we needed it....... ;-) Oh!

DARK FRUITCAKE

3 c. Pillsbury Best All Purpose or Unbleached Flour (I use freshly-milled spelt and wheat combination)
1-3/4 cups firmly packed brown sugar
2 t. baking powder
1 t. salt
2 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice
1 c. liquid (fruit juice, water or milk)
3/4 c. shortening, melted OR oil
1/4 c. molasses
4 eggs
3 c. (1-lb.) raisins (I usually use 1 c. currants, 1 c. dark raisins, and 1 c. golden raisins)
2 c. (1-lb.) mixed candied fruit
2 cups (1/2-lb.) pecan halves (broken pecans work fine)
1 c. (1/2-lb.) whole candied cherries
1/2 c. chopped candied pineapple
8-oz. pkg. (1-1/4-c.) pitted dates, cut into large pieces

Heat oven to 275Â°F. Grease (not oil) two 9x5-inch loaf pans and line with waxed paper or foil. In large bowl, blend all ingredients except fruits and nuts at low speed until moistened. Beat 3 minutes at high speed. Stir in fruits and nuts. Spoon batter into prepared pans. Bake at 275Â°F. for 2-1/2 to 3 hours or until toothpick inserted in center comes out clean. Remove from pans; cool. Peel off paper; wrap cooled cakes tightly in plastic wrap or foil to keep moist. If wrapped tightly, fruitcake will keep in refrigerator up to a year.

Other Fruitcake Pan Sizes:

For Dark Fruitcake recipe - fill containers 2/3 to 3/4 full.

Coffee Cans (1-lb. size): 4 cans - bake 1-1/2 to 2 hours

Soup Cans (10-1/2-oz. size): 12 cans - bake about 1-1/2 hours

Miniature Loaf Pans: 6 pans - bake about 1-1/2 hours

Muffin Pans: 48 cups (lined with paper baking cups) - bake

There's no trick to it. It firms up on its own as it cools. I've had success by nuking frosting at 50% in 5 second increments until it's just barely just liquified. I test by stirring. It only needs to be warm enough to be dip-able. In my mind, (your mileage may vary) warming the frosting in a shallow, flat-bottomed container, barely bigger than your cubes, would be less messy than pouring... you could dip one side at a time, and if you worked quickly, your finger marks in the frozen cake would fall out as it cooled. I learned this trick from an awesome book I bought my niece and nephew for Christmas. They describe the technique on pages 18 & 19, which you can see by clicking on the "search inside this book" link, entering the work "microwave" in the search pane, selecting the second search result, and turning to page 19 with the right hand arrow. (For the record, the book is way fun!) I tried this dipping technique with cupcake frosting and the results were so flawless that the ladies I served them to assumed I'd done something very difficult and fancy. The punchline was that it took less time to dip (from scratch) cupcakes into warmed white Duncan Heinz frosting (with a bit of yellow food coloring and lemon extract added) than it would have taken to frost by the traditional method. The frosting firmed up a bit and they looked beautiful. This book also demonstrates a stupid-simple technique of drawing a design on a paper template, slipping the template on wax paper, melting some colored wafers, spooning them into a ziploc, cutting a tiny hole in the corner, and drawing on the wax paper. I've been playing around with a white cake version of this for cupcakes. It's bake sale season around here and cupcakes are always a big seller. The problem I kept running into was texture. My 15 yr old said it tasted like cornbread, meaning a coarse texture. I ended up using cake flour and superfine sugar and that seemed to do the trick. The original recipe calls for all purpose flour so I got out my scale and weighed an equal amount of cake flour (125g/cup). I'm not sure on the substitution ratio in cups of cake flour for all- purpose. I also added in about 1/3 c of sprinkles to make them funfetti:) This is my version of the recipe Vegan Cupcakes from allrecipes. This is definitely not vegan anymore. 2c all purpose flour (I used 250g cake flour) 1 1/2 c buttermilk 1 c superfine sugar 2 t baking powder 1/2 t baking soda 1/2 t salt 1/2 c oil 1/2 t vanilla 1/2 t almond extract Preheat oven to 350�. Line 18 muffin cups with liners. In large bowl whisk together flour, sugar, baking powder, soda and salt. In separate bowl whisk together buttermilk, oil, and extracts. Pour into the dry ingredients and mix just until blended. Spoon into muffin cups and bake 15-20 minutes.

Oil is typically not used in a white cake, they require a solid fat - shortening/butter/coconut oil, or a combination of solid fats (some recipes will include half shortening and half butter - the butter contributes flavor). CAKE 101 - Cakes are classified according to whether or not they contain fat. The majority of cakes are either shortened or unshortened; a third category is chiffon cakes. Shortened cakes are also called butter or conventional cakes and use a solid fat. Examples of shortened cakes include the standard plain white, yellow, chocolate, spice, Bundt, pound cakes, and fruit cakes. The solid fat is combined with the sugar (creamed) until it's light and fluffy and the cake is leavened with chemical leavening. The solid fat contributes to tenderness, volume, moistness, and flavor. Oil coats the flour proteins which prevents them from adhearing to water. This reduces gluten formation and leaves more moisture in the batter. An example of this is a tea bread or quick bread. The addition of a liquid fat (which can be a melted solid fat or a vegetable oil) will result in a heavy and compact cake (think banana bread or pumpkin bread which are quick breads, not cakes). Unshortened cakes, also known as sponge or foam cakes (include angel food), use no fat, but get their volume from beaten egg whites. Chiffon Cakes are a hybrid of shortened and unshortened cakes. The fat, usually from vegetable oil and egg yolks, is combined with foamed egg whites, cake flour, and leavening agents. Common examples include lemon or chocolate chiffon cakes. One of the best white cake recipes is from Betty Crocker - SILVER WHITE CAKE, but it's made with shortening, and you can find the recipe on-line or in all the older Betty Crocker cookbooks (Betty Crocker's Picture Cook Book). sapphires, I don't even like bananas, I don't even eat banana bread, but I eat this cake. Ashley says it's her favorite, the best she's ever had and it is darned good. It was posted on the Cooking Forum by a former poster, J. Garner, who worked as a pastry chef. Banana Cake (Rose Levy BerenbaumÂs Cordon Rose Cake) Jgarner-Cooking Forum (good as layer cake, elegant, delicate texture) mix together: sifted cake flour 2 cups sugar 3/4 c + 2 Tbs baking soda 1 tsp baking powder 3/4 tsp salt 1/2 tsp puree together: 2 large ripe bananas 1 c sour cream 2 Tbs or up to 1/2 c 2 large eggs 2 grated lemon zest 2 tsp (I left this out since I don't like the flavor of lemon with banana) vanilla 1-1/2 tsp soften: Butter 10 Tbs (5 oz) Add butter and half of pureed mixture to dry ingredients in stand mixer and mix at medium with paddle for 1-1/2 minutes. Scrape bowl and add rest of banana mixture in two batches, mixing 20 seconds after each addition. Pour into 9"x2" round pan (I just lined the bottom with parchment, no spray or butter) and bake at 350 F for 30 to 40 minutes. Cool for 10 minutes in pan and then turn out onto rack to cool completely. Hint: Use smallest amount of sour cream and 3 bananas for more pronounced banana flavor Cream Cheese Icing Cream cheese, softened 8 oz. Butter, softened 5 TBS (2.5 oz) Sour cream 1 Tbs Vanilla extract 1/2 tsp. Rum 1 Tbs Powdered sugar 1 1/4 C (5 oz) Process (yeah, the food processor) or beat cream cheese, butter, sour cream, and vanilla until smooth. Add powdered sugar and pulse until smooth. This sounds really good and easy! However, I DO like booze in my fruitcake (why else eat it LOL) so can I sub booze for some or all of the liquid?

1 c. liquid (fruit juice, water or milk)

Otherwise, I can just soak the fruit/nuts in booze then mix it as directed......

From the recipe - FRUITCAKE TIPS:

For brandy or rum fruitcake, use 1/4 c. brandy or rum for part of the liquid. Wrap cooled fruitcake in cheesecloth or other porous cloth that has been soaked in brandy or rum. Then wrap in foil or plastic. If desired, resoak cloth about once or twice a month.
