Comments (2)That clothing could used for "weed" barriers under a Lasagna Bed since the depth of the bed would, or shuold, be deep enough so none of the plants growing there would need to root through that cloth. Comments (12)Congradulations on your crop! This was the first year we have had enough of anything to can...moved here from the city with no veggie garden experience. Sunday, my family made an assenbly line and canned tomatoes for the very first time! It was quite a messy, but fun experience. Feels good to know that if my 18 yr. old son, ever needs or just wants to save money for his family someday, he will know how. We are also hopeing to have a larger garden next year. I'd like to some day be able to say, "If we didn't grow it, we don't eat it." LOL If we said that now, we would be living on tomatoes, cucumber, and squash. Wounder how large a garden it would take to can enough for all winter too? Guess it's still a dream for now. My DH bought packages to pickle some of our cucumbers. IF we have enough left after my cucumber salids, and cucumber sandwitches. (They have tasted so good during this hot weather!) Comments (5)This is all very interesting. . .I always use homemade noodles when I make lasagna. (Which is why it is my boys favorite meal - and why it takes longer to make and I do it less often.) My noodles are made only from eggs and flour (in the food processor). I roll them as thin as I can with my Atles and cut each sheet in half length wise. I gently boil them until tender (not very long) and then proceed with the meat sauce and cheeses. I try to always make extra for the freezer. I prefer to use a mixture of sour cream and cream cheese in place of the cottege cheese. Comments (41)I make fresh pasta for lasagna, and I roll it out with a rolling pin even though I have a pasta machine and a pasta attachment for my Kitchaid mixer. I like to bake it in a Corningware pan, and I roll the pasta out into a squircle to fit the pan exactly - thus each layer has only one sheet of pasta. For the pasta dough, I use 1/3 cup whole wheat flour, 1/3 cup semolina flour, and 1/3 cup white flour, plus 2 eggs and 1/2 tsp salt. I generally mix the dough in a small bowl, as that is easier for me than cleaning a food processer bowl. I get six or seven sheets the size of the Corningware pan, depending on how this I want to make the pasta. If I wanted it thicker, I would divide the dough into five balls instead of six or seven. I only roll the dough out when I am ready to assemble, as it can crack if it gets too dry. I never boil fresh lasagna noodles before assembling them, and they should not be allowed to dry out.
