Well. It is St. Paddy's Day. So we're having corned beef, roasted fingerling potatos and onions, warm cabbage salad (vinegar/sugar/mayo dressing), baby carrots with a sour cream-horseradish sauce, cheese bread with Irish butter.....and apple crumb pie. No school for the kiddies tomorrow. No work for me either. So will probably stay up late and watch a movie or two with a cup (or two) of Irish coffee (decaf). Then bed.

Corned beef and cabbage with potatoes and carrots; black-eyed peas; and cornbread. We are English, but there's a smidgen of Irish tossed in, so this is our traditional dinner on St. Patrick's Day.

Well, your hubby's in for a long evening, isn't he? Have you posted your sloppy joe recipe? If so, I missed it. We're having corned beef with potatoes, carrots and onions boiled in the corned beef juice. We'd have cabbage with it but I forgot it and didn't feel like going to the grocery. Also bread I made yesterday. That corned beef has been cooking in the crockpot and is smelling awesome! When I take the beef out of the crockpot I'll pour the juices in a big pot and cook the vegetables in it.

Glad it's him and not me Patti! Oh, I meant the patrons drinking green beer, not the band. Nothing worse than seeing a drunk on stage......patron or a band member, and I've seen both!

LOL.....one lady in her 70's crawled up on the stage, literally, staggered over and hugged hubby as he was playing! She got escorted out. heehee

My sloppy joes is just a wing-it thing. Brown hamburger, onions and celery; drain. Add a can of tomato soup, and some ketchup, worcestershire, barbecue sauce and hot sauce, combined. Garlic powder, salt and pepper, and I put in my seasoning blend. Simmer and dinner's on the table in less than 1/2 hour.
It's a great hurry-up dinner.

Busy week and I never thought of corned beef, onion & cabbage until this morning! :/ Dean stopped after work for take out tho....I am eating it right now! Although, I like my cabbage WITH onions better, oh well.

Yesterday, I bought some of that new Philadelphia cream cheese sauce, the one with garlic.

So, instead of the Shrimp Scampi I was going to make, I boiled some Penne pasta. Tossed some diced red bell peppers, asparagus tips and raw shrimp into the wok, with a little oil to cook up, then added the cream sauce and cooked Penne.

It was really good.

I guess I maybe should have used green peppers for St Pat's day :)

we had our corned beef on Sunday so tonight is grilled boneless pork loin chops and coleslaw with oven roasted red potatoes

Tonight someone from my daughter's work sent us some soup, and I made cornbread to serve with it.

this must be the night for baby reds...they didn't fit in my crock pot with the corned beef so oven roasted them...

I'm having Julie's Wet Burritos. I made them a couple of weeks ago, and froze a bunch. They are so good.

Sandy, tomorrow we're having the recipe you posted for corned beef dish with the potatoes. onions and corned beef fried together. I think I'll like that better than tonight's dinner :-)

I am 1/4 Irish.
For dinner tonight I made boiled dinner made with beef roast, potatoes, onions, celery, carrots, beets, rutabegas, and cabbage. It was delicious! We topped that off with Blarney Stones for desert.

When I make things like this, I always over estimate the amount of EVERY veggie. We have enough left over for a re-heat meal and then a soup to follow that.

I'm so glad DH enjoys this kind of meal, because it is what I grew up on.

I'm only 1/8th Irish the rest of the year, but 100% on Saint Patrick's day! We love corned beef and cabbage and potatoes, and that's our traditional St Paddy's meal. It was delicious last night! Just perfect! I cooked two corned beef's so tonight it will be Reuben Sandwiches. Yummm.....
