farm fresh turkey help needed

Living in a rural setting has its rewards--I've orderd a 16-18lb fresh turkey for Thanksgiving. Is there anything I should do differently when cooking it? I usually just add some fresh herbs and baste and rely on a thermometer to know when it is done. I've always been happy with the results.

FYI, here is a bit about the turkeys from their facebook page:

"Shotwell Brook Farms is a family owned, pasture-based, way beyond organic farm. We produce sweet corn, tomatoes, blueberries, pastured poultry (eggs, broilers, turkeys) salad bar beef, and forest raised pork. Being grass based allows us to move our livestock and poultry more frequently to new "salad bars". This allows the land to heal and redeem itself while growing a better tasting and nutritionally superior, humanely raised product. If you want to go green, you can't do better than to purchase grass based foods. After all, grass is the most efficient solar collector, converting massive amounts of solar energy into food for our animals"

It's also nice to support our local economy.
