Is Your Supper Green?

I am not having an Irish supper but there are a couple of green things, green beans and spinach salad. I am also fixing fried chicken thighs and biscuits and gravy. Also the iced tea. Please tell us what you are having for this St. Patrick's evening.

Part of our meal will be green beans and green mashed potatoes. Also, I always greet DH with a green beer when he gets home on St. Patty's day.

Pork steaks on the grill here w/Noodles Romanoff and fresh broccoli.

I'm having a great day! I watched Oprah this morning. She had a lady on that went to a foreclosure auction and ended up buying a woman's home and giving it back to her. She started a foundation to save other people from foreclosure. I donated 100.00 to the fund. After that I went to a Focus group on oral care products. We were being paid $150.00 for 2 1/2 hours to give our opinions. They called 8 people's names and left me and another guy sitting alone in the room. They told us they overbooked and we could go home. We still got paid the money. I know it was good Karma coming back to me for my $100.00 donation. If any of you want to donate I linked it below. Costco chickens are brined (soaked in salty water or injected with same before cooking, i don't know which process they use) . That's why the end result is consistently "juicy". The liquid at the bottom of the container is more water than fat but it does seem to mix together and get gelatinous when cooled. The product's convenience and price are tempting but we stopped buying them when they had their episodes in our area of bacterial contamination and periodic undercooking in the stores. That's a bad combination for chicken.

I don't mind frying chicken once in awhile. Jody would have me frying chicken every day, if I'd do it. There is no a/c in any room but the bedroom, and it is so hot to stand over a skillet of chicken. Jody has had my truck for a few months now....and I have been home with no transportation. I really don't mind very much because I like being home and it is a good excuse not to have to go anywhere, and I have been cleaning up a storage building that flooded during the flood. I can only stay out there about an hour a day. Jody has asbestosis and trouble breathing, so I really don't want him out there. So, anyway, he has done most of the grocery shopping, which leaves a lot to be desired. He brings home what he wants me to cook. That's why I said he brought home a chicken. It does sound funny though. ;))

56steps, the original recipe, I believe, came from our Glenda years ago. Salsa Chicken and Black Beans 1 jar of your favorite salsa 1 can of black beans, drained and rinsed 1 can or 1 1/2 cups fire roasted corn (this I added to the original recipe) 1 to 2 cups shredded cheddar or Mexi-blend cheese 4 boneless, skinless chicken breast halves. (I use 6 and it works fine) Place beans and corn in baking dish. Top with chicken, then pour salsa evenly over top. Cover with foil and bake at 350 for 35 minutes. Sprinkle cheese over top and bake another 5 minutes uncovered. Serve with sour cream and your favorite corn chips. I used to have a source for frozen fire roasted corn with onions and peppers. When using it, (frozen) I added 5 minutes to the baking time. Can't get it anymore, have been looking for something similar. No luck, so have used just plain canned corn lately. It is ok, but not as 'colorful'.

Just home from lunching with friend with the Irish theme.

I had this:

Wish I'd gone with Glenda! We're having corned beef, cabbage and red potatoes. Cabbage is green, I guess. It sure smells good!

The colcannon was different.

Here's recipe

colcannon

3-4 medium potatoes, peeled and quartered
3 tbsp. milk or unsweetened/plain soy milk
1/4 tsp. salt
1/8 tsp. pepper
2 cups chopped cabbage or kale
2 tbsp. butter or margarine
1/4 cup chopped onions or green onions
Directions:

Cook potatoes in a pot of boiling water until tender. Drain, reserving water.
Place the hot potatoes in a large bowl.
Add chopped cabbage to the reserved potato water. Cook 6-8 minutes or until tender.
Meanwhile, fry the onions in the butter or margarine.
When they are cool enough to handle, mash potates with a hand masher or fork. Add the fried onions and cabbage.
Add milk, salt and pepper and beat until fluffy.

Here's the boxty cake: Mine had scallions in them

Boxty (Irish Potato Griddle Cakes)

8 Servings (Halve this recipe for smaller families)
1/2 lb raw potato
1/2 lb potato,mashed
1/2 lb all-purpose flour
1 Milk
1 Egg
Salt and pepper to taste
Grate raw potatoes and mix with the cooked mashed potatoes. Add salt, pepper and flour. Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon. Drop by tablespoonfuls onto a hot griddle or frying pan. Cook over a moderate heat for 3-4 minutes on each side. Serve with a tart apple sauce: or as part of an Ulster Fry, with fried bacon, fried sausage, fried eggs, fried black pudding, fried bread, fried soda bread.

Our dinner wasn't green, but it was Irish and DELICIOUS!

We had boiled dinner that included:
Beef
onions, celery
beets, carrots
rutabeggas, potatoes
cabbage

Along with that we had both Irish Soda Bread and Brown Bread.

We topped it off with Key-Lime dessert.

It was a great meal!

Green, yes...Irish, no.
I had some really great seaweed (Fueru Wakame) with noodles, spices, sesame oil and rice vinegar.

No..I had chicken livers from a take out place. Then, indigestion when I got to the old guy's house that I take care of, and found out he had fallen and couldn't get up. :(
