I've had a very good roasting pan for years that is non-stick. Never had any problems with having browned bits and juices for making gravy. I've just had to be careful about what I used for scraping so I didn't scratch to coating. I usually remove the meat and set the pan directly on the stove burner, add my potato water (or whatever liquid you prefer) and proceed.

I always thought you weren't supposed to use the non-stick coated ones on the stove top since they could leach harmful chemicals into the pan juices. Anyway, I've never used mine on the stove for that reason.....

Alexa, why would that matter, it's the same coating in a non stick fry pan isn't it?

I dunno - I seem to recall my non-stick roaster came with a warning not to use it in an oven hotter than 350 F and never to use it on the stove top..... maybe it was a cheapie POS (it was a gift) and it isn't an issue with the better quality ones.

Or maybe I am just losing it! LOLOLOL!

Nope....non stick should not be used in a hot oven....which is why I don't have a non stick roasting pan.
And a non stick doesn't really develop that wonderful fond like the non non-nstick do.
I still prefer my old savory roaster, with the lid for a turkey. But it won't really hold a bird much bigger than 16 pounds....maybe 18 if you tuck the wings well!

Can you fit one of these? I think I got the Calphalon but the Cameron three piece looked attractive too and is at a good price point - I just wasn't sure it was quite big enough for me. My requirement was that they be stainless steel on the outside - no non-stick coatings - and aluminum core for heat distribution when using them on the stove top for making gravy. The Calphalon roasting rack is non-stick but it says it is oven-safe to 700 degrees and you don't have to use the rack.

If those are too big, there is also this one that I got for smaller jobs. No rack but it is stainless and tri-ply. It cleans up really nicely.

Unfortunately, the prices are up on these things since I bought them last year.

Have you looked in appliance forum Lacanche thread (most recent)? I agree with Linda re: fond and non-stick. Also, I had an All-Clad nonstick roaster that was a gift. The non-stick bubbled when I roasted a rack of lamb. All-Clad refused to do anything about it because "It would only have done that on high heat." I pointed out that the pan is a "roaster" and "roasting is, by definition, done on high heat." Moral of the story? All-Clad non-stick roasters are a fraudulent product.

Mu new Lidless open roasting pan....as different from the old style Savory blue enamel has flod down handles and that allows a bigger pan into my oven.
I found the perfect roaster! Clad, shiny on the outside with the most graceful handles you ever saw and the price was really ruight...but with those danged handles it wouldn't fit into my oven!!
