Chicken Fajitas and a new Griddle

Actually the griddle isn't really new. I've had it about four years but have never used it. Given to me by my neighbour Clif.

It is huge - 23 inches in diameter - and heavy - cast iron.

I used it twice in the last two weeks to make Asian type stir fries. It is almost like a Mongolian BBQ griddle or a Japanese Steak House Teppanyaki grill.

I might never use my wok again.

It was perfect to cooking the chicken and vegetables for chicken fajitas.

Marinating in a little of the homemade salsa for about 30 minutes while I made the flour tortillas.

Lots of room on the griddle to cook the chicken breasts all at one time.

Browning nicely.

Chicken moved off to the side and the green peppers and onions added to the griddle. Pan was quite hot so didn't take long for the vegetables to cook.

The chicken was sliced and placed back on the griddle with homemade flour tortillas and lime. Served family style, everyone helping themselves.

Topped with homemade salsa and guacamole (made by Matthew).
